Today's baking is "Plain scone".
Savory and clean taste of basic scone matches well with jam or butter and This is my favorite scone!
Try this scone which is crispy on the outside but soft in the inside. :)
Plain scone (8 scones)
Ingredients
250g Cake flour
1g Salt
6g Baking powder
20g Brown sugar
70g Fresh cream or milk
40g Egg
75g Unsalted butter
1. Beat the egg.
2. Mix the 40g egg with cool fresh cream.
(Place it in the refrigerator.)
3. Dice cool unsalted butter and place it in the refrigerator.
4. Sieve cake flour salt and baking powder
5. Combine the brown sugar.
6. Add the cool unsalted butter.
7. Chop the butter up by scraper.
8. Chop it up until the butter becomes size of a grain of adzuki bean.
9. Add the remnant of them except the 1 table spoon of the cool fresh cream and egg
10. Mix them by spatula.
11. Mass dough into a lump by scraper.
12. Mass dough into a lump, cut it in half and pile it up in 3 times.
13. Make the dough into 2cm thickness.
14. Wrap the dough with plastic wrap and refrigerate for 1 hour.
15. After dredging with dusting flour, flat and cut the dough by cutter.
16. Mass the remaining dough into a lump and again and cut the dough by cutter.
17. Spread the mixture of remained 1 table spoon of fresh cream and egg on the top of the dough in 2 times.
18. Bake at 195℃ for 15-17 minutes.
