Regarding polyphenols, those Southern Hemisphere hops have tons of them, plus more total oil content. I did a clean Best Coast IPA with a massive Nelson dryhop and it turned out the haziest IPA we've brewed. The polyphenols and hop oils also like to bind to any proteins in your malt, so flaked grains/high protein base malt will contribute to the haze. Note: I crashed yeast before dryhopping so it really is a oil/polyphenol/protein matrix (no yeast) which does add to a very nice mouthfeel. Useful if you're trying to brew a hazy, if you want pure west coast try to keep it low protein grains and maybe low polyphenol hops. Also, got the same brew journal!

Very nice brew Steve. I haven't played much with galaxy hops. Except the one time i made a red ipa using red-x malt falconers flight hops and galaxy. It was also a star wars theme i called it X-wing red 5 Cheers

No worries, first of all they dont always come out perfect, but with a good knowledge of your system, your ingredients, and the style at hand most of the time a good beer will come out of the process. I highly recommend the book "Brewing Classic Styles" by Jamil Zainasheff. Although its designed for extract brewers, it gives an excellent breakdown of every BJCP style with an example recipe. Usually if its a new style to me I'll consult this book and do a lot of research on the internet. From there on its a little messing around in beersmith and then I feel comfortable getting my ingredients together. A lot of it is also just building experience in knowing what kinds of characteristics to expect from various types of malts, hops and yeasts and how to tie that in with my brewing water and the style I'm working with. If you have more specific questions feel free to reach out!

Love Galaxy hops and it is become my favorite IPA hop as well. My favorite I've made with Galaxy is a SMASH with MO as the malt. My GU:BU ratio wasn't anywhere near as high as yours though (1.060 @ 50 IBU) with an oz or two for dry hopping; each time I poured a glass, the entire area around my kegerator smelled of citrus and passion fruit. The haziness is most definitely from the dry hops, but will dissipate over time. Once the weather gets a little warmer, that beer is going back on the schedule. May even consider using a little bit of rye, too. Cheers!

I'll probably lower the bitterness ratio for the next single hop IPA I do, but I really believe it's not as intense as the numbers suggest due to the first wort hopping. Then again my perception definitely isn't the same as everyone's. This hop really is a citrus bomb though and I love it so much. I bet it would pair really well with the biscuity character of Maris otter! Thanks for watching, and cheers!

Love the addition of the flaked rye here. I've been thinking about tinkering with some more rye in some future recipes... Nice video! For the haziness, try to avoid grains with a lot of magnesium (flaked ones) and the salts.. stay around 10-15 ppm of magnesium. 30-ish for NEIPA Just a try! Did it and worked! It's not magic but could help! Cheers from Brazil!

There certainly are a lot of factors! Unfortunately the magnesium thing is a bit hard to work around with my city water. I usually have to add a ton of magnesium sulfate (epsom) to my brewing water to get the sulfate levels high enough to brighten hops. I'll keep it in mind though, cheers!

Great video! Looks tasty! Geez thats bitter. At least with FWH it's a bit softer. Personally, I would have moved the 20min addition to a post boil hop stand, but to each their own and that's what homebrewing is all about! I'm on the fence between Mosaic (Blueberry) and Galaxy (Apricot). Yep, the Rye addition adds a nice complexity for body and spice. You can try flaked triticale as well for a new dimension with a bit less rye spice. Might be tough to find Aussie hops next year due to all the wildfires. Enjoy while you can!

So the beer definitely is losing its hop freshness from the late hops additions (it's now several weeks old) and I have been noticing the bitterness a lot more lately haha. More reason to keep drinking it though! I like hop stands as well, I haven't used one in a bit so maybe I'll throw one in for my next IPA. Cheers!

I followed this recipe and the beer came out bitter with a slight sulfuric smell. I believe I did a good job sanitizing everything and kept light exposure to a minimum. Do you have an idea as to why this may be/are there ways to fix it? The smell and taste were much better after cold crashing but still not great. The only thing I did deviate on was that I did forget to dry hop the beer. Just curious on your opinion here and ideas on what I can do to improve.

Sulfur smell is a common yeast byproduct, especially in lagers and if you ferment cold. What yeast did you use and what temperature did you ferment at?

The other possibility is water related. If you already have a very high (250 ppm+) concentration of sulfate in your brewing water it may produce sulfur like character

Just wondering what you think of using a hop like magnum to do all the bittering at 60mins and save the aroma hops for whirlpool & dry hop? I'm doing a citra/galaxy IPA tomorrow and planning to do this. Am i losing anything by not having these hops in the boil? There is nothing wrong with using a different hop for bittering, I just really stuck to the single hop theme on this one. I just sometimes prefer first wort hopping over bittering because to my palate its a more pleasant bitterness, but that's just me, nothing wrong with doing a 60 min. Cheers!

I enjoyed your video. I was interested that you brewed with Galaxy at the time of a new Star War movie. The creator of Galaxy was Grey Leggett from Tasmania. He sadly passed away in 2006 and was my brother in law. He named Galaxy because of his love of science fiction. He was a brilliant scientist, hop breeder and family man. It is a pity he didn't live to enjoy the popularity of Galaxy. He died of cancer at 53, he made his last phone call to his assistant two days before he died. When I brew with Galaxy I tip my glass to Grey.

Its whichever pump is linked in the description box. I did get it from amazon but I believe it's a third party seller, but it cost me somewhere around 75 dollars and so far it's been great. Pushes wort 5 ft vertical when throttled 75% without any problems

Great video. Be safe my brother, your setup look dangerous, so many trip hazards. I think on our home brew scale mash temp isn't quite as important as we make it out to be. A recent exbeeriment verifies this. i accidentally mashed in at 160 once and like you said it look a long time to drop to 152 and ended up with my highest efficiency ever and a great fg. Also please clean that scale lol.

That’s a pretty high BU:GU ratio. Maybe dial down the ibus for more of a balance. Plus it’ll cost less to brew it.

You're totally right, but keep in mind that first wort hopping tends to amp up the IBUs by around 15-20% compared to a 60 min bittering addition. However the FWH will be a lot smoother and less aggressive bitterness than the lower IBU alternative (at least in my experience). But then again, I love really hoppy beers so I am pretty biased haha

I started messing with my water about a year ago, and it turns out my city water makes better malty beers than hoppy beers. Once I saw how big of a difference it made, I kept doing it for all my beers regardless of malty vs hoppy. IMO its not 100% necessary for a GOOD beer, but it is for a GREAT beer.

Hazy / NEIPA should have haze. A traditional IPA should be clear. That said, clarity is never super important to me. Flavor is first.
