isn't it easier to have 2 rows with 3 switches? top row on/offs each pickup. bottom row parallels/series them.

No, not really. Say you want to achieve neck pickup in parallel with middle pickup, all of that in series with bridge pickup. According to your suggestion, you would flick all three pickups on, then select parallel for neck and middle and series for bridge. But how would the circuit know that you want to put the parallel circuit (N+M) in SERIES, NOT IN PARALLEL with the series circuit (B)? You would need yet anothet switch for that (unless you use very complex 7P2T switches instead of the 3PDT ones). That would be seven switches in total (not mentioning phase) whereas this schematic only has four switches. But to each his own

What does Series and Parallell mean, and what different characteristics do they give to the sound?

Series: Pickup ground runs to the hot on the next pickup. THEN, the ground actually goes to mutual ground. Parallel: Pickups are ran to a source (switch) for hot, and then the pickups are individually grounded.

To give you a better picture, when 2 pickups in series, you will have larger output (gives you a thick humbucker like sound). But when the pickups are in parallel, you will have a lower output hence the you get the thin strat sound.
