ingredients for the dessert:
Sugar Dough:
100g unsalted butter
100g flour
100g powdered sugar
100g egg whites
Fruit:
50g canned peaches
50g pears
50g melon
1 kiwi
Sauces and Ice Cream:
10g chocolate sauce (for decoration)
60g vanilla sauce
1 scoop of chocolate ice cream
1 scoop of vanilla ice cream
1 scoop of caramel ice cream
Garnishes:
1 meringue
Cocoa for dusting the meringue
5g maple syrup
5g walnuts
1 fresh strawberry
Step-by-Step Instructions for Ice Cream Dessert:
1. Prepare the sugar dough base:
In a mixing bowl, whisk 100g of egg whites until frothy.
Gradually add 100g of powdered sugar to the egg whites while continuing to whisk until the mixture is glossy and stiff peaks form.
Sift 100 grammes of flour into the mixture, folding gently to keep the air in.
Melt 100 grammes of unsalted butter and fold it into the mixture until well incorporated.
Spread the dough mixture evenly on a baking sheet lined with parchment paper.
2. Bake the dough:
Preheat your oven to 200 degrees Celsius.
Place the baking tray in the oven and bake for 5 to 8 minutes, or until the dough is lightly golden and set. Watch closely to avoid over-baking.
3. Prepare the sugar dough squares:
Once the dough is baked and cooled, cut it into even squares. These will serve as the base for the assembled dessert.
4. Prepare the fruit.
Dice 50g of melon, 50g of peaches, and 50g of pears into small cubes.
Peel and finely chop 1 kiwi.
Combine all the chopped fruits in a bowl.
5. Mix fruits with vanilla sauce.
Add 60g of vanilla sauce to the bowl of mixed fruits and gently stir to combine, ensuring all the fruit pieces are evenly coated with the sauce.
6. Decorate and assemble:
Drizzle 10 grammes of chocolate sauce over a serving plate in a decorative pattern.
Arrange the sugar dough squares on the plate.
Neatly pile the vanilla sauce-coated fruits onto the sugar dough squares.
7. Add ice cream and garnishes:
Place a scoop each of chocolate, vanilla, and caramel ice cream on top of the fruit mixture.
Drizzle 5 grammes of maple syrup over the ice cream.
Place a meringue on top and dust it with cocoa powder.
Sprinkle 5 grammes of crushed walnuts around the dessert for added texture.
8. Final Touch and Presentation:
Garnish with a fresh strawberry as the finishing touch.
