Hey Kristie! I made this tonight. I prepared a salad on the side with romaine, avocado, cilantro and scallions and for my family made a steam bag of brown rice to serve it over. For myself, I made a medium cooked egg and ate it kind of like a huevos rancheros.... It was very filling and super easy! I LOVE your recipes. You are my keto idol!

You truly are an inspiration to me. After watching your video about your weight loss journey, I found it to be a close mirror image of my own life. I guess that was my "connect" to you. HOWEVER,,,, Unlike your daily vow to yourself to "just get through today", I wake up every morning and say to myself... I've had enough!!!!! Then I check my urine and I am in ketosis or I watch such inspirational people as yourself on youtube or on some of my facebook forums and I think, this is possible. I reflect on your words and your success more often than you might think. I always look forward to your videos and totally crack up at your silly boy! I love how patient you are with your children and how your whole family has a part in the making of the videos together. Your daughter is so autonomous managing this way of eating. She really gets it! You should be proud of her! (As I am sure you are). It's tough being a teen and to avoid all the junk that she encounters and to avoid it is awesome! Great recipe! - Years ago I learned to always take low carb snacks to social functions, low carb veggies, low carb dip, lots of cheese and ice cold flavored soda water - I only ate what I brought to the snack table so even if I over indulged because of the social atmosphere it was not really too bad - I really love wine, so I just put some in the soda water and made a spritzer - I never had a sweet tooth but I love chips and dip, pretzels, popcorn and any other high carb, high salt snack - Unfortunately I slowly developed bad habit, so now I am starting again - Thanks for sharing your weight loss journey and recipes like this -

OMG! I actually cooked something I enjoyed eating. I don't usually follow a recipe closely because I don't have all the ingredients ( mostly seasonings. since I don't cook enough they tend to go bad so I buy and toss). I've stocked up. Now excited to try more recipes from the cookbook.

This sounds awesome. Will make this it this weekend! Thanks!!! Make your own Taco seasoning. Ingredients 2 tablespoons chili powder 1 tablespoon ground cumin 1 teaspoons xanthan gum 2 teaspoons kosher salt 1 1/2 teaspoons hot smoked paprika 1 teaspoon ground coriander 1/2 teaspoon cayenne pepper Use 2 1/2 Table spoons per Lb on meat. Store rest till next time.

But thanks to you and your modifications I can still have it! I have one request. How about meals for your husband to take to work ideas. My Husband loves his sandwiches. So far I have talked him out of bread. So he took up Mission Tortilla wraps! I need suggestions to help him along. I am not trying to force him to eat this way he is willing with guidance. One could also use pork rinds in place of chips if they want to eat/serve it like a dip. Also on a slice of cloud bread and eat as an open face sandwich or on top of a large cheese crisp like a tostada.

Looks good - I'll give it a try. Incidentally, I know what you mean about not being able to eat things when in a group setting. I can't eat gluten (well, I could if I want to get sick), and it is only possible to eat something other than my own dish, if another person brings something that is also gluten free. So, when the gluten free people are all in attendance, we get to eat what each of us has brought. It is VERY hard when I am the only one, plus going to dinner at someone's home is almost impossible. Of course, most people just think that gluten is bread or pasta - they don't realize that gluten is put into so many things as fillers and stabelizers, etc. Thanks for using individual seasonings for the video since Taco seasoning usually has gluten in it.

+Glenda Correll Exactly! You have to read every label. There are times when I simply explain that my body is carb intolerant. That puts it on me and doesn't put a value statement out there that judges what other folks eat. If they then google carb intolerant they will find good info by Dr. Phinney and Dr. Volek.

Please look for Hatch green chili from NM and you'll love Mexican vanilla (La Vencedora) cheapest if bought in Mexico but available on Amazon. Takes about 1/2 as much to start but you'll love it so much your oops may get bigger over time. Hope you try these. Sherry

Hi Kristie! I'm not sure if this is the right place to ask you this since it's not about the recipe, but do you count macro-nutrients? Do you have a certain amount of carbs that you try to stay under, or do you just try to eat as low carb as possible? I hear different things (max 20 carbs vs. max 80-100 carbs) about getting into ketosis. I've ordered the first book you recommended, but am anxious to get started now. It seems like a lot of the people who do Keto are athletes, which I am not!, so I'm not sure how much of what they say applies to me. Thanks! Also, your necklace and the blue are very flattering on you. 😌

the recommended macros I've followed are from Dr. Westman. His general eating plan is fewer than 20 total carbs per day without worrying about calories. what I also understand that to follow a ketogenic diet usually means 65 to 70% of calories from fat. as you get closer to goal many folks find that they need to eat a little less fat and more protein. hope that helps!! excited that you're excite! and I love jewelry of any kind!! I especially love wearing the older jewelry that my grandmother had.

Sounds like you're a fast learner! The free app MyFitnessPal is. It perfect, but the one I prefer when I track. So glad the Trader Joe's video was helpful! Their cheeses are amazing. I like the full fat raw milk cheeses and my daughter likes Kerrygold Dubliner from there. My husband still has me buy 6 packages of unexpected cheddar at a time!! Lol! We get there maybe once a month so he has me stocking up. Your kids are at great ages to understand the science and do this along with you.
