I'm confused about the multi stage incubation times. For example, in the case of chicken eggs, for the first 17-18 days, it's recommended that the humidity level be much lower than the last 3-4 days. If you are doing multi stage incubation in the same machine, where different batch of eggs are added a different time and hatch a different time, but in the same incubator, what happens to the humidity requirements of the different stages of hatching?

Hello Rafael. Many people that are multi-stage incubating use a different machine to hatch in as it helps to keep the incubator clean and then the humidity can be set at the level required in the separate machine. Most people that incubate and hatch in the OvaEasy just leave the humidity level the same throughout the incubation and hatching with excellent results. From what I can see, there is a distributor in Iraq (a newer one than on their distributor guide, someone from Brinsea mentioned in a reply below.) Now, instead of buying a hatcher with the 500, couldn't you purchase the 190 and use it as a hatcher? It's the same price, holds the same amount as the hatcher, but is also an incubator.

Yes, some people do like to use the 190 as a hatcher. They can use it an incubator and a hatcher. Some people prefer to buy a separate hatcher. :)
