I live in Southeastern Arizona. I will probably have to start ordering what kinds of meat that l want. Only bad thing is the shipping cost. I can’t find brisket, beef ribs . I found pork belly once but it was just a bunch of scraps especially under the top layer.

Even easier than doing a slab of beef plate ribs! These look so good. I will have to mess around with pork belly on my OG Weber kettle. I have a Traeger, but I prefer stuff like this more caveman style.

Yeah they are so simple to pull off! I also love cooking it on my kettle. Just rotate it a few times if you’re doing a 2-zone setup so it cooks evenly.

@@ChilesandSmoke Good advice on rotating! Webers are fantastic for 2-zone setups and in spite of not being insulated, really hold a stable BBQ temperature. I used to grill everything with LP until I got my first Weber, then it was game on from there. I haven't used a gas grill in about 15 years. I dig BBQ or live fire direct heat since then. Good to be proficient with both, but I prefer charcoal or wood to gas.

Looks good Chris! Real Texans are purist though ;) S&P and let the smoke do the rest and the real meat flavor shines through. Kind of like what goes (or doesn't belong) in authentic Texas Red Chili! LOL

I'm Brad 😂 but I will tell you that's definitely not a consistent case (S&P), and was disappointed years ago when I discovered most pros will use Lawry's in addition to it. There's nothing wrong with a sprinkle of garlic and paprika, I doubt you'd find a Texan that would cry about that! 😬
