My Nan taught me this scone recipe. She always added Hot English Mustard from Colmans, being from Norfolk it makes sense. She said it made the cheese more cheesy. She also said that if your scone didn’t do the “pull apart” mark around the middle they were not cooked enough. Her cheese scones have stayed with the family and now I make them for friends on a regular basis in South Africa, still using Hot English Mustard but also I have added fresh herbs and on occasion smoked paprika. I love how food that is rooted in tradition, no more so than a scone, can transcend flavour profiles and travel the world. Fabulous. If you use buttermilk or soured milk instead of plain milk, it makes them fluffier with a little added kick. During gardening season, I add freshly chopped herbs (dill, parsley etc.) for a little variety. Very nice accompanied with beans, eggs or soup.

For all those worried about Red Lobster closing down and not getting yuor biscuits, this will fix you up. Thanks Rik. I like to carry even plain ones have for a break even when bird hunting. Other times a couple with a cup of tea from my thermos is great. Your stomach don't care if they are called biscuits or scones.

I love scones, especially cheese ones, but they are one of those things that are at their best freshly cooked. They are never quite as nice the next day, unless you toast them. Toasted cheese scones are delightful. The toasting brings out more flavour in the cheese and freshens up the scone completely. Butter thickly with cold butter and voila! A beautiful crispy, toasty, deeply flavoured cheese scone. Have you ever toasted them Rik?

I would put jam with that butter and eat the bottom first. When my mother was a little girl she used to save her marzipan icing from the christmas cake until last but her older sister used to steal it. I remember that story so well that I ate the good stuff first in case one of my four brothers would swipe it. Must try your scones. ♥

I'm hungry already and we are only at the mixing ingredients stage. Creative starting point for the five pounds or two kilos of spreadable homemade goats cheese I was given a week ago. It freezes for storage. Interesting to add a small amount of powdered mustard. thus room to experiment with taste combinations.

More memories!! My auntie Jean used to make these.. recipe as is, but with the addition of garlic salt... And when they were done the smell in the kitchen was amazing and the flavour was reminiscent of roasted onion with the cheese and not garlic... They were so savoury..!! And obviously like you say, cold butter on the hot scone, simple and delicious.!!

I think they don’t need anything else but butter, especially 2hen they’ve just been made. I know what I’m making when I wake up. If I could do it quietly I’d go and make them now but knowing me I’d drop the tray on my stone bench top or the floor and wake everyone 8n the house up lol. Safer for me to wait till morning. Just made these, I think I overcooked them slightly but not to worry!!! They are crisp on the outside but fluffy and very light on the inside!! I use half Red Leicester cheese (for the colour) and half of the strongest Cheddar I can find. As well as mustard powder, I add a little cayenne. Gives a lovely tang. Another trick is to freeze the butter then grate it into the flour. I do that with sweet scones as well.

Hi Rik, another brilliant recipe and one of my favorites, but i don't make them into individual scone i made 1lb loaf tin so i can slice it put into the oven to warm it up and have it with a nice slice of bacon delicious!!! keep them coming your enthusiasm in cooking everyday and showing us all your results and quirky re-inventions, and putting the wire rack in rather than the tin means there's more heat that can travel to the bottom of the tin just a suggestion.

I love cheese scones and these look delicious, and yes with cold butter😋 and I would eat the bottom first and savour the top 😂 Love them with soup. 😊xx
