This looks exactly like my homemade Detroit style (the first place you went to). The only thing is that I don't have easy access to Wisconsin "Brick" cheese, which is I believe the traditional cheese for Detroit-style pizza. Instead I use a 50/50 blend of mozzarella and muenster. It's still absolutely delicious. That cheese crown is the best part, lol. The secret of the dough is high hydration, at least 70% (I usually go for 75%). That's what makes it super fluffy and airy instead of chewy and dense.

I grew up in Tennessee in the ‘70s, when pizza wasn’t easily available in any form. My dad lived in Detroit as a kid in the ‘50s, before moving back to Tennessee. When I was a kid he would always talk about the pizza he had when he was a kid “up north.” I lived in New York and New Jersey in my 20s and 30s and never experienced the pizza he described. I was in Detroit a few years ago and finally realized what he was talking about. Really exceptionally good pizza.

I love the story behind Detroit pizza. It's so distinct from New York and Chicago. My winner is Chicago pizza. The herbs are perfect, the sauce is thick ad spicy and the longer cooking time gives the flavors time to meld together beautifully. Giordano's is THE place. My mother and father in law own Renaissance Faires and we'd absolutely take over the place after a long day and hoover the pizza. Hunger is the best sauce, but nothing will ever be a better pizza to me.

I'm from Detroit... and I'm getting older, every day! When I was in Grade School, maybe in the late 1950's or early 1960's, I went to school with another boy, whose father (and Grandfather) were the original Founders of Buddy's! I have loved Buddy's pizza, my whole life... I don't think that will ever change... but I do also love the place at Michigan and Trumble, and a few others. Over the years, everyone (even the national chains that service the Detroit communities) off a pizza in the "Detroit Style."

I don’t know about the shape of the pan in Detroit. Here in NYC the thick, square pizza is known as “Sicilian” and the round pies are “Neapolitan” or “regular.” Fun fact; the “white” pizza was named “Margarita” after an Italian noblewoman who preferred a sauceless slice that was prepared especially for her in Naples.

Like Andrew, the burnt sides are my favorite part. BTW: I recommended your YT channel to the "BLANKS No One Asked For". They asked for YT channel recommendations they can collaborate with. A bit of sports history behind the name of that first restaurant, as well: the corner of Michigan and Trumbull is where Tiger Stadium used to be before the baseball team built and moved to the new Comerica Park. Ernie Harwell, the longtime radio voice of the Tigers, would welcome listeners to each home game "at the corner of Michigan and Trumbull." Just about every Michigander who was around before the move knows that phrase quite well!

Detroit area resident here. Detroit Style is more like a Fruit Pie thickness whereas Chicago Deep Dish is more like Birthday Cake thickness. Chicago also has a very thin style called Tavern Style. Yes, Buddy's is the original, but I don't think they are the best. Michigan and Trumbell is named after the intersection where the old Tiger Stadium (where the major league baseball team The Detroit Tigers used to play) was located. It is Much better than Buddy's. Pie Sci and many other places (such as Jets Pizza) have the "Detroit Style" crust, but then a more "traditional" top with the sauce then mozzarella cheese then toppings. It's good, but not "real" Detroit Style. Detroit Style pizzas that also are better than Buddy's can be found just north of Detroit in nearby cities Hazel Park (Loui's Pizza,) and Royal Oak (Palazzo Di Pizza.) Thanks for sharing! ~Be Blessed

Visually, I'm going to say you guys made the right choice. I've yet to visit Michigan and Trumbull, but I've cooked professionally for over 30 years in Michigan and have tried a great deal of pizzas in the area, and have developed a Detroit-style pie of my own that does very well. That said, visually, the Michigan and Trumble pie looks absolutely off the charts! Perfectly caramelized edges. The sauce looks thick and caramelized. Great topping distribution. That cup pepperoni looks top-tier. Great pull on the mozz. Whoever developed this pizza REALLY knows their stuff. Hats off to their chef.

This is my favorite style of pizza. The way they get the bottom crispy is they put oil in the pan, so it's basically fried bread. Just a little vocab note - we call the whole thing the crust, not just the edges, that goes for any type of pie. Also the cheese isn't burnt, it's caramelized.

Detroit Style is very easy to make at home. Very forgiving dough for beginners. Chicago Style Pizza bakes for twice as long, that's why the cheese is less burnt. Traditional Detroit Style Pizza uses Wisconsin Brick Cheese and the Sauce is ladled on in lines, not full coverage spread. You oil the pan and the dough basically fries.

Detroit is my personal favorite. Chicago is a bit too much and New York is a bit too little (dough and cheese wise). Online it seems most people prefer new york style due to thin and crispy, but I just love a bit of a thicker soft dough that detroit nails without overdoing it! Also weirdly enough detroit style reminds me of 1990s pizza hut (which is a good thing)😂

I swear I could have pizza for every meal the rest of my life and die happy. Particularly the excellent slices I was raised on during my formative years in Brooklyn. I hope they travel to arguably the best borough of NYC during their visit, particularly out to Bensonhurst or Cobble Hill. These are among the oldest Italian enclaves in the city and where the heart of the pizza beats loudest (and in my humble opinion, by far the best!). 😂

Detroit isn't deep dish. Deep dish, as you experienced in Chicago, is like a pizza crust swimming pool with a solid layer of cheese then traditionally sausage with your sauce filling the rest of the "bowl" along with any other toppings. The thick rectangular crust style of pizza is called a Sicilian or grandma pizza. Detroit pizza is basically this Sicilian or grandma pizza with the addition of a ring of cheddar baked around the edge of the crust. NYC, Chicago and Detroit are all great pizza places but I think you're really missing out by not going to New Haven, CT and getting possibly the best pizza in the world.

I grew up in Detroit (actually in, not in the suburbs).. the sauce on the top is NOT a requirement. The requirements are deep dish, rectangular, and cheese all the way to the edge. Buddy's likes to insist that their way is the only real way, but they are wrong.
@bradbertram7596
@bradbertram7596 3 күн бұрын
Respectfully disagree. I'll agree that Buddy's is overrated and basically hot garbage, but I don't agree on your description of a Detroit-style. Rectangular, yes. The same as a deep dish... no. You're looking at it from a shape perspective. The dough composition and cooking technique is quite different. The dough is a higher protein from traditional dough, and it needs to have a higher oil content to fry in the pan to create that crisp texture on the bottom and sides. "Cheese all the way to the edge" is an adequate description, but I would argue that you need to actually stack the sides a touch to create the customary caramelized cheese barrier. "Sauce on top is NOT a requirement"... I just plain disagree. Sauce on top allows the oven to more readily caramelize the tomatoes. Do you have an example of a legit Detroit-style pizza that puts their sauce under the cheese? I'd genuinely love to try it, if so. Honestly not trying to gaslight you. Just in disagreement, and genuinely curious. Regards.

Not "drip trays". A drip tray would normally be larger surface area to catch drips from a wider area. The pans were automotive parts trays. Line workers would keep parts in them for their assembly work. That's why they are the size and shape they are, not overly large surface area but fairly deep to keep parts from falling out when you have your hand in pushing them around to grab one, perfect to hold a bag of nuts or bolts.
