Brittle vs Honeycomb vs Sponge Candy

Peanut Brittle
1 1/2 cups (300g) sugar
1/2 cup (150g) corn syrup
1/4 cup (57g) water
6 oz (170g) peanuts, roasted and unsalted
1 tsp baking soda
1 tsp vanilla
1/2 tsp fine salt
1. Mix the sugar, corn syrup, and water together and set over medium heat.
2. When the sugar reaches 270F (132C) mix in the peanuts and continue to mix until the sugar turns a light golden brown (around 310-320F or 154-160C).
3. Remove from the heat and mix in the baking soda. The candy will foam up.
4. Finish with vanilla and salt and spread onto a parchment lined sheet pan. Let cool completely.
Honeycomb
1 1/2 cups (300g) sugar

2. Without stirring, let the sugar cook until it reaches a light golden brown (around 310-320F or 154-160C).
3. Remove from the heat and mix in the baking soda. The candy will foam up.
4. Pour gently onto a parchment lined tray and let cool undisturbed for at least 2 hours.
Sponge Candy
1 1/2 cups (300g) sugar
1/2 cup (150g) corn syrup
1/4 cup (57g) water
1/4 tsp powdered gelatin
1 teaspoon water, cold
1 tbsp baking soda
1. Mix the sugar, corn syrup, and water together and set over medium heat.
2. Mix the gelatin with the remaining 1 tsp of water and set aside.
3. Without stirring, let the sugar cook until it reaches a light golden brown (around 310-320F or 154-160C).
4. Remove from the heat and let the mixture cool slightly until the bubbles subside. Mix in the gelatin and stir to combine.
5. Finish by thoroughly mixing in the baking soda and place back over the heat for 30 seconds.
6. Deposit into a 9inch round cake pan that has been lined with parchment paper on the bottom and sides. Let cool undisturbed for at least two hours before slicing with a serrated knife.

In a slightly different timeline, I might've liked honeycomb, but when I first encountered "Chocolate Coated Honeycomb" long ago I was legit expecting actual honeycomb taken from a bee's hive, full of honey, coated in chocolate, and I was *SO DISAPPOINTED* when I took a bite it just ruined it for me. Love me some peanut brittle, though.

I made sponge candy the other day after seeing this and holy shit its so good. You can also use vinegar instead of gelatin as it reacts with the baking soda. You want to use equal parts sugar and corn syrup (dark tends to be better) and each cup of each add 1 table spoon vinegar and 1 tablespoon baking soda. Mix quickly and pour. Youll want to refrigerate it to get it fully set so its brittle and crunchy instead of chewy

In India, we call the brittle “chikki” and it is largely made with peanut, almond, cashews you name it, the most famous one is of peanut. Instead of sugar, we usually use Jaggery which results in a harder texture.

Yeah except if you got it on your skin or tongue it would instantly burn it all the way to the muscle layer and because it's sticky it will be hard to remove so it will rip away your tissue lol

In Brazil we call this candy with peanut "pé de moleque", witch means boy's foot , and also without baking soda, and usually we cook it a little bit more to caramelize it to light brown... very good

Sponge candy is the superior candy! It’s delicate, melts on your tongue, like cotton candy, tastes like caramel, with a hint of bitterness like a roasted marshmallow. If you make it, you must cover it in chocolate or the humidity will melt it. You won’t be able to make it well. If it’s humid in your house, it needs to be dry in your house. If you want to taste the best sponge candy in the country, you need to order from Watson chocolate in New York. Peanut brittle is common place, and honeycomb is the B rated version of sponge candy. Seafoam is pretty good, but still not as good as original sponge candy. And it taste nothing like those candy bars y’all are talking about. Sponge Candy is so much better!

Honeycomb is delicious. It reminds me of 달고나 but the ingredients are a bit different. 달고나 is just sugar caramelized in a ladle then a bit of baking soda is added. Very simple to make, and very delicious 💜

Thanks for the explanation! My partner, family, and I really love honeycomb candy and knew how it was made, but we've had other candies that were marketed as something different, but we thought it was just another kind of honeycomb. Watching this, I realize it was sponge candy! We all wondered how they got it so fine inside and tall!

How can you make the bicarb soda taste go away? It is always so present in honeycomb. Does the sponge taste less salty because of the addition of glucose?

You don’t taste the baking soda as much in sponge candy it the flavor is different slightly, then honeycomb, and in my opinion for superior. I recommend ordering it from Watson chocolate in New York. It will be one of the most amazing things you will ever try.

Anyone ever had success making brittle with some other kind of syrup? I'm allergic to corn among other things. I used to love peanut brittle!

Probably maple syrup honestly, I don't make candies like this, but maple syrup isn't as sweet and has a distinct flavor so I don't know how it will change the overall flavor. Though it would probably work super well with the honeycomb and sponge candies.

the honey one is very similar to karumeyaki! i think the difference is karumeyaki uses egg whites and brown sugar
