Just to help anybody who is curious, if you change the pH with lemon/lime/citric acid/malic acid/etc you may need to use a different amount of Agar powder. Agar is very forgiving though because you can just reheat your gummies and add more to achieve the desired texture. (I learned this making acidified mandarin orange “roe” for a cocktail competition)

Healthy Fruit Gummies Recipe Ingredients: 1 pound of strawberries Juice of 2 lemon 1/3 cup of honey 1 teaspoon of elderberry syrup 3/4 cups of water Agar agar** (see instructions) Instructions: 1. Clean and dry the strawberry, then cut the tops off. 2. Add the strawberries to a food processor along with the juice of 2 lemons, honey, elderberry syrup, and water. 3. Blend until super smooth and measure your mixture. 4. For every 1 cup of blended strawberry mix you have, use 1 teaspoon of agar agar. I had close to 3 cups so I used 3 teaspoons of agar agar. Add in your agar agar and mix well. 5. Using a syringe, pipe the strawberry mixture into silicone molds. Let sit for 30 minutes. Pro tip: If you let them sit for a few days, they dry leaving them with a concentrated flavor and chewier texture.

@@kaduku1112 I just laid them out on a baking sheet and set them on a counter with a fan pointed in their general direction for about a day and a half, and that seemed to do the trick. I was concerned about using a dehydrator because I was afraid even the low heat might have made them melty. As for spoilage, I haven't had a batch last more than a week, but I was keeping them in a sealed mason jar and they were just fine for that period of time!

Thank you for this recipe, I’m so excited to make them! If I have one suggestion, I’d recommend adding the elderberry without boiling it if possible. The boiling is likely to kill some of the nutrition from the elderberry syrup, it’s best to prepare it at lower temps.

I mean, honey is only slightly better than sugar and heating the whole thing up will turn the fructose into a processed sugar and kill most of the vitamins. thanks and yes, I let them dry out on the counter for 1-2 days. Then I put them into an air tight container and store them in the fridge for up to two weeks.

We made these yesterday. Conclusion: this is jello, not gummi. They're not chewy. Slightly disappointed, but will keep adjusting the recipe. Next time without lemon juice. This made it way too sour and the kids didn't like them.

Maybe try real gelatin, instead? I've had store bought vegan gummi bears before and they did indeed have a different consistency. So I believe, it's due to the plant based thickener. But thanks for the warning about the sourness, that's good to know in advance!

@@raraavis7782 I'm a vegetarian, so thats a no go for me. I could give it a try for my kids though and see if it makes q difference. But I think its the sugar in gummies that make it chewy

@@suzannevandoorn5628 Good luck experimenting! Another thing one could try is dehydrating them. Maybe as more of a fruit leather then, to speed up the process. Getting some more of the moisture out, might give them a chewier consistency. Maybe they're just too moist, especially when freshly made.

@@suzannevandoorn5628 Oh, you can dehydrate with low heat - it just takes longer. Kinda like blowdrying your hair on the cool setting. But starting with as little water as possible and maybe a higher sugar content would definitely be an advantage 👍🏻

I had to google this. So: Excessive heat will definitely degrade the beneficial enzymes and also affect the flavor, but the temperature levels within the beehive can go up to approximately 95 ºF (35 ºC) and that means a little heat will not affect the ingredients in honey.

Blending the fruits with the seeds can add bitterness. You can cut or crush then infuse them in the honey for a cleaner flavor. But you will also miss out on the fiber content

@@Warmaka well, if one has diverticulitis you can't have whole seeded strawberries. Therefore the gummies are safer. Plus sometimes you have a craving for a sweet treat and forever chemicals are in twizzlers. I'm choosing the healthier route. You do you bub, and I will do me.

@@joyful_tanya IF you're going to talk about these treats, well... the seeds are still there. You'd have to run them through a strainer to have no seeds. So, doing the recipe like this or eating whole strawberries... what's the real difference? You'll still get seeds either way.

@@Nevario1 yes, exactly you have to run it through a strainer. I love to cook, bake and make my own versions of things. I don't do gelatin because of where they get it. Natural sea weed is awesome. This I can consume safely. So, if you want easy and you don't have health challenges, by all means, knock your socks off. But do not tell others how they should think and feel. That is rude and unacceptable. Have a glorious day.

Sure. Pure cranberry juice (the unsweetened kind) would also be an excellent choice. It has a very strong, tart flavor, but no bitterness at all. And it would deepen the color even more.

@@DaveYognaut yeah but the sugar is from the honey. It doesn’t spike your glucose in the same way as table sugar. It even has the benefit of reducing blood sugar believe it or not. I wouldn’t want to eat half a cup of honey in a day or anything, but it can 100% be included in a healthy diet.

Did you strain the berries before adding them to the pot? Your mix looks very smooth. I had mine in the food processor for about 4 minutes and still had small bits of seed and skin that kept stopping up my syringe.

If your food processor isn't the most powerful then it would probably work better in a high speed blender. Or just strain it through a sieve that isn't too fine, just to get the big bits out but keep some fiber.

They get their product from cattle raised in Brazil, so it's most likely a product of rainforest deforestation. I bet that "Green America" badge only pertains to the part of the company that's in the US. Don't fall for the marketing buzzwords

If their claims of being 100% pure (which means nothing really since it's a given, at least here in the EU) are true, then being grass fed doesn't have any impact on the product. I'd be very careful spending a premium for such brands
