These baskets came with my new Weber Master Touch and after my first attempt at indirect cooking, I was not happy with their function as separate units. I had done research on the SnS and was about to buy one until I stumbled across this video. I used the baskets that came with my grill, made the same modifications (with a few detail differences, fasteners mostly) and the result was superb! Mad props to Daddy Dutch! Thank you!!

I cut to size a piece of metal mesh (the kind used for tiling) to keep the smallest lump charcoal pieces from falling through the grate and I wall it up with a couple of bricks. Works like a charm. My grill is a cheap, barely above camping grade rig and it runs and smokes like a weber. The only other "mod" I made was to make a large diameter washer to keep the top vent disc honest and snug to the lid surface.

Keeping the hot coals off of the kettle wall helps keep the heat in the kettle. The water pan helps block the radiant heat of the hot coals. Great easy mod! Right on Kent!

One benefit of the SNS is how it evens out the temperature across the cooking grate. I'd be curious how this setup compares. It certainly works better than the two baskets did.

Hey Ryan, just an inexpensive option because i thought the 2 baskets were clunky and didn't match up well together on the same side. Not a true replacement for the S n S but a very workable option. I typically just use firebricks to bank my coals to one side, and place foil on the exposed charcoal grate on the opposite side. Im going to make these and also use the firebricks against this to really dial in my Kettle smoking set up.

Also, for that extra open space, I saw another video where he adds an extra 18 inch charcoal grate and sits it on top of the existing charcoal grate and turns it 90 degrees to make small squares and limits the charcoal falling through thus forcing the charcoal to burn even longer(hope that makes sense to everyone) will be trying it soon! This could be made easily with adjustability in mind. Using wing nuts and multiple holes along the back. Then slide the front closer and close up the back to create a smaller charcoal spot.

@@daddydutchbbq Just finished a 2lb grass fed chuck. 3hrs, 2hrs wrapped in foil, 1hr back on grill. used Oak chunk, lit one end and it burned great at 250 for 3hrs! wrapped it and added a little more chunk. Also added a little honey and some double IPA. Did great for the 2hrs '(250-275). Unwrapped for last hr and it started to taper at about half hr mark, stayed at 200 to finish. Got it resting now and it looks and smells amazing. Making some tacos with it! Pretty impressed at how easy it was to maintain that 250 mark!

Not only can you put some in a drip pan under the meat, but another approach is to put some in a small loaf pan or mixing bowl directly over the lit charcoal. Really helps to moderate the temps and provide steam in the kettle without totally blocking meat from heat under the grate like the SnS does. (Who only wants to cook the top side of their briskets and pork butts?)

I do put a water pan in most of the time. I also wrap the charcoal grate in foil to force the sir through the Bro N Sear basket.

I bought a cheaper pair of these and it shows! I left mine as 2 separate pieces, I will have to think about doing this mod Kent. Yeah, I may do this, but instead of measuring I will just stick it in the weber. Wow, just realized this video came out in 2019 and has over 53K views, awesome!

You could also use some metal vegetable cans and put in the corners and put the coals around. Just fill with water. Maybe the results would be close to the same

i did this, but left the round part off and didn't put a bolt through it. allows you to adjust how far back you want the charcoal or how much of the grill you want charcoal in easily.

nice idea!! I just use the empty baskets to create a gap on one side of about 1/3 and fill that up. Do you think this works better?

I think it works great along with the second piece of metal I put on the charcoal grate to make the air flow through the charcoal basket for a more efficient burn. Also Weber recommends not banking you coals on the outside of your Kettle to protect the paint .
