Brook I have watched you grow as a cook for some time now. I can say your flounder dish is by far the best dish I have seen anywhere on KZbin. To give you a back ground on myself. I am a professional chef of over 38 years. I am a certified executive chef. I have taught cooking for some 12 years. I have to be honest not all your technics are perfect but I wouldn’t expect them to be. But I feel you have a great understanding and are always striving to be better. I would be proud to serve that dish in my restaurant anytime. Thumbs up. Ps I would love to give you and Vick some private cooking tips. I think that would greatly help you. Please feel free to reach out with some type of contact info. Your Gram is the bomb.

Brooke, I just watched this video for the second time. Your mom mom is amazing at 88 years young. My grammie is 104 and has all of her faculties and is in great health for a woman her age. I just love your family and am so excited for your engagement to Victor. You both are such sweet people and I know you are going to have a very fruitful and happy life together.

The unusual looking meat on the edge of the fillet is called the "frill." Some folks think it makes the best sashimi out of the whole flatfish. I've never had it raw but I do just leave it on when cooking flounder and never really notice it. Keep up the great videos!

a much smaller sinker usually means much fewer snags for some reason - or no sinker and let your fish swim, hook it through the tail - above or below the spine it swims on the surface or on the bottom in response to the hook positioning..... enjoy.
