We fish out of Key West, Florida for a variety of species including mutton snapper and yellowtail. The biggest mutton gets eaten by a GIANT Goliath grouper before we get it back! I show you how to fillet a mutton and yellowtail. Then i meet you back in the kitchen for mutton on the half shell, vegetable shish kabobs and couscous!

I'm a retired Chef. I live in Florida. I have worked with chef's that have been on Iron Chef America. Between your channel, and your BF, or Husband's channel. You have really good cooking technique's! The only pointer I would give you is to learn how to cook in-direct on a grill. It will make life so much easier!

i love love love your videos with catch and cook!! I started watching a few when i was in the hospital back in january, i tried skiing in my bathroom, and I lost. I like how Brook is usually fishing the conventional gear, that's how we do it on the norm in so cal, for heavier stuff, 15 and up,.. that wild cranking on the coffee grinder looks weak sauce.

Looks absolutely amazing. You should try rubbing the fish against the grain of the meat with softened butter and then dusting with Tony's Blackening spice before grilling. It's heaven. Snapper is one of my favorites , with Redfish still my absolute favorite. Snapper Veracruz happens to be my favorite way of eating Snapper. Love Vic's and your catch and cooks, they continue to give me new ways to look at the kitchen.

Brook try using parchment paper on your cookie sheet when cooking fish on the half (in oven), really does a nice job in browning and crisping minus the stick to the pan :)

Great post, lub me sum Mun-en. What happened to Bubba?...Don't remember if ya did a poach cook, like to get a large piece of heavy duty tin, half it, throw some lemon and/or orange slices down, top that with some summer veggies, croak neck squash, onjun, maters maybe, garlic maybe, choice of tarragon, basil and the like. Top with your Fee lay and repeat. Add a decent white wine with butter and make a pouch with the tin foil. Oven or grill for great results :)...hope ya try.

I guess we have to go to Key West again for some fishing! Amazing video and I love the recipe. We made an extra effort last year to fly to the Bahamas, the water was beautiful, but the fishing is even better around Key West. Great job, thanks for sharing.
