The time that they are referring to with Holt's taste is much earlier, in the first season where the pizza place burns down. He says Boyle's is the only one that measures mouth feel, that's why he reads it. I like to think, though, that he's making the best of a flavourful existence. He also says in other episodes that plain toast is his favourite breakfast and nothing is better than a plain scone. So he reads to know which foods from where have the most ordinary mouth feel, or something like that.

Jake went on a “mission” for the mob that took 63 days, a mission is a part of an operation. He could very well have been telling the truth and spent 63 days of his 6 months being undercover to carry out a mission for the mob. That’s not an inconsistency or a mistake, it’s context, Jake brought it up to Pimento to level with him a part of his experience. Just because someone experienced something similar to you doesn’t mean you can just drop you’re entire story on them because you can relate, so it makes sense to me at least why he would only bring up a part of his assignment undercover (likely a darker memory that Pimento can relate with) as Pimento had likely experienced the same process, therefore the specifics are what matter most to them not the big picture. Example: when I get together with my army buddies after a while, we don’t tell each other about how or why we got into the military, we talk about memories that are good and bad and share a laugh. It’s essentially the same thing happening between Jake and Pimento. So no it’s not a mistake, it’s the art of picking what you want to say that’s most important plus given it’s a tv show they can only spare a few lines before introducing a comedic gimmick, effectively ending the momentum of the encounter.

Holt's tell when he lies. In season 1, when he is receiving death threats and he goes to the safehouse, Jake says that the captain's tell is a mouth twitch. But in season 5 when Jake goes undercover on the gambling case, Holt tells him that it's using contractions while speaking (can't, won't, shouldn't), something which he uses in normal conversations even when speaking the truth, so double slipup.

Another inconsistency is Holt's favourite breakfast. In one episode he says it's plain toast, but the breakfast he always orders at the diner is a hard boiled egg yolk and room temperature water. Also in another episode Jake brings Holt his "favourite breakfast" and hands him a plain bagel and cup of water.

In the episode when the squad was worried about the precinct being shut down, Amy spent a day being mentored by captain holt. Captain holt said not to trust any child that chews bubblegum flavoured gum and not to trust any adult that chews gum at all. In another episode where Sharon was giving birth, captain holt was sitting at Gina’s desk because Sharon felt uncomfortable around him. He then told jake that Gina had all his favourite chewing gums

In season one, Jake calls out holt when he lies because he can recognize his “tell” which is where he moves the corner of his lip, whereas later in the show during the poker episode, Jake struggles to learn holts tell and when he does finally learn it, it’s a completely different tell

I mean before the episode Hitchcock and Scully, no one in the precinct beside themselves knew they were hot when they were young, so the flashbacks are probably everyone else’s imagination based on how they look now. The young Hitchcock and Scully in that episode are how they actually look back in the 80s, that no one previously knew about and they have the picture of the “four bags of money” to prove that’s true because the picture must be real.

Pilot episodes don't count. A lot of shows have characters who are added or dropped by the second or third episode. There was already a large cast, Daniels would be one too many and they probably realized that Scully and Hitchcock worked better as a duo because three's a crowd. Is it too unreasonable to assume Kevin's parents have lightened up? Oh no! Boyle calls Thanksgiving "Turkey Day!" in one episode and "Thanksgiving" in another? Because they can't be used interchangeably? It's one thing to talk about kids when it's hypothetical (it's one of those weird things that people just assume is going to happen eventually) but can be scary when it becomes a much more real possibility. Now that he's married, could it be Jake realized that he's not ready just yet? Oh no, Hot doesn't like lying and then lies occasionally anyway? Isn't that just so...human of him! Also, Holt is used to people not respecting him because he's black and gay, and he feels insecure around Kevin's intellectual friends. Do you think, maybe, just maybe, he's curated such an image for himself because of those insecurities that don't always reflect reality? Besides, the squad has helped him learn to relax a little and not worry so much about maintaining such a high standard of his image, and yet does not compromise his principles. Gina is the biggest troll on the show. Besides, you can know what Hobbits are without watching the movie or reading the books. Claiming to not know LOTR one minute and referencing it later is a very Gina-like thing to do because she's a troll! So you're just noticing how hyperbolic Jake can be? A lot of these are signs of character development. And a show that's run for seven seasons and counting is going to have a few minor inconsistencies here and there. Minor details are going to get forgotten once in a while, so what? I was hoping this video would have more things like actual mistakes. (Like, for a made-up example, Amy is holding a binder in one shot and in another shot she's holding a notebook, kind of mistake.)

I remember Jake mentioning that he doesn't have kids 'yet' or saying things about 'when he has kids'. I've always taken it as Jake thinks he wants kids in the future but not as soon as Amy does. He didn't say that he doesn't want kids, just that he's not sure if he wants them and never has. He probably made these passing comments about kids because it's Jake and he doesn't really think about things serious like that, plus he probably assumed he'd want kids in the future but now that the future he was thinking about has come, he realised this isn't the case.
