the ramen buns arent "prepacked" they are made off site cause you dont have real prep space at smorg. i dont think its that great but just saying also for those saying the guy threw out the brisket been to that booth many times the trash can is higher (you can see it when he grabs the pulled pork) there is a bin below that they put the burnt ends for staff sandwiches or you can request a burnt end sandwich

Please , make one of your "in the kitchen " shows about Chinese pancakes . Like the KZbin videos about the street vendors frying huge pancakes and filling them with all sorts of good stuff .Those look so good I want to try making some but , the only recipes I can find are for scallion pancakes . haha they didn't buy it prepacked. they probabaly made it the night before in order to make the ramen bun, you need cook the noodle, cool down, add an egg, mix and put them in the fridge for a few hrs for them to keep their shape
