I'm not convinced that this is brown butter. Surely to make brown butter you cook the butter separately, first evaporating the water within the butter so that it can get hot enough to brown the milk solids. But if you add butter to wet tomatoes, followed by pasta cooking water, then that's not going to happen.

Hi Donal.. Just thought I would enquirer about the HEX CLAD pan and versatility of use and its longevity from a every day family/chefs perspective..Your thoughts!! I have used cast iron makes for longevity..Can this pan set be put in the dishwasher and oven.. Kindness your way...Thank-you.. They are a high cost item for sure.. At 03:40 I am still awake as pain medication not workig. After yesterday being a "driech"day = dark/overcast damp day for 1st day of Autumn this reminds me as much as I adore Autumn and Winter, Spring & Summer will follow and as dark winter days approach and now we can get colourful Tomatoes year round what a lovely recipe to bookmark to bring summer into the kitchen....mind you i will have to adapt for me as on week 37 of using Slimming World Plan to eat well, get active and lose weight at yea achived yesterday 3st award. I still have along way to go but with recipes like this to inspire me to be in my happy place the kitchen cooking and baking what is not to love 😊
