I'm only about a third of the way through, spicy lamb next, and these ideas have already got me going BIGTIME! In fact I have made celeriac, Jerusalem artichoke and potato mash years ago myself, funnily enough, which I served with roast duck and a v dark, thick gravy with star anise in and some plum stuff, thing is it DOES provide a clean and transparent contrast to rich, dark things. This chocolate gravy is going to be fantastic, I can taste it with my mind, but I can't wait to get my laughing tackle around some of this for real! Seeing Sir Patrick is a joy, you can see how he appreciated that lovely burger. A flavoured brine really does keep fried chicken moist and loose in a good way, really indulgent when you get the crunch and flavour and then the succulence, beautiful. Looking forward to seeing the rest of these bold yet classic technique ideas. Really yummy! Nice one Jamie. 🌟👍

Can't get Ox tail here in the States. Butchers are selling Cow's tail as "Ox tail". One of my favorites in a Wisconsin winter was my mother's Ox tail soup. 😋

I study these cooking channels and for some unwarranted reason, Jamie gets hated on. I differ and think he is not only an incredible Chef and probably a good guy in person aside from the videos. Even if not, I am grateful for the training and wish him the best. I am ashamed about the rudeness he gets on You Tube and very sorry for him.

Not sure if these are recent recipes and don't get me wrong they look lovely but there are so many families who can't afford this sort of cooking. It would be lovely to see some realistic very low budget recipes. I'm not sure what audience you are aiming at but it's not people in poverty
