I just cooked these, it wasn't my first recipe of madeleines. They didn't develop the bump but raised very well. I added Jack Daniel's whiskey and it is amazing 😍, for glazing I reduced by half the amount of icing sugar and there still were leftovers, also had to add a little more liquid to make it more watery. Overall very good recipe! Taste is very unique

Such a beautiful way of making this video and the delicious whisky Madeline. The way you made “brown butter” is essentially how we make “ghee” in India- so could I use ghee instead ?

You could use melted ghee but you will lose all the toasted buttery notes that brown butter brings to this madelines :)

Yeah looks burnt - the blackened milk solids are a bit of a no go for me will give them a bitter note to the flavour

Sandy Zhu the purpose of rebaking after coating it is to ensure that the icing sets. :) you don’t have to do it but it dries out the icing and creates a thin crisp sugar shell

I have not made the recipe. I do drink whiskey and bake Madelines. For that amount of whiskey, probably not much flavor unless the whiskey is a strongly peated scotch. Thinking about it, Early Times Bottled-in-Bond bourbon or Bushmills Peaky Blinders edition are pretty flavorful. Maybe double the quantity from the recipe. Let's give it a go.

Cooling long enough (at least one hour, up to a day) in a fridge and baking them at different temperatures. I bake mine at 230C for 4 minutes and then at 200C for about 3-6 minutes
