Made this twice now and very happy with results. However when I add the oats my dough gets to be a soggy mess until i add more flour. I'm thinking of just adding another 50gm of flour with the first mixing!! Also the second time a got multiple bubbles on the skin of the loaf when it was baked. I do wonder if the oats SHOULD be cooked or not, that extra water in the oats really make a difference. But thank you for the digital hand holding!

The book says it makes two loaves. Did you half the ingredients?

I just tried making this bread but I had to through it away. When I put the oatmeal on the dough and started folding the oatmeal was coming out of the sides. My oatmeal was a little bit watery and my dough was tough. Any suggestions? I will try again! :)

Hi Kathy, thank you for the comment!! Oh no! So sorry to hear about your bread! The consistency you mentioned sounds about right. It takes me at least 5-10 minutes to get the oatmeal evenly distributed. It will form pockets inside the dough, but if you continue that folding technique for quite a while, it will eventually all get incorporated into the dough and the dough will be more moist and sticky! I hope this helps! This is such a good loaf if you can get past the folding in the oatmeal!

@@PaigeBurrows I had this same problem, the dough was already tight and just started "roping" when I added the oat mixture instead of incorporating. Do you think it would be possible to add the oats in the initial mixing and rest, and then the brown sugar and cinnamon during kneading?

Yes I think that method would work well - it’s so difficult to get that oatmeal distributed into the dough, but I definitely think that method would work! I love this recipe, so I will definitely be giving that a try myself next time I make this bread. Thank you for the recommendation!!

@@PaigeBurrows Yay! I will try it tomorrow when I make this bread again. A lot of other "leftover oatmeal bread" recipes instruct to add the oats in the initial mix, so I think it'll be ok. We'll see! I REALLY appreciate your videos, they're extremely helpful :)

That dough can get really sticky. Especially if the oatmeal decides to escape and you basically force work it in.

It really does get really sticky. The addition of the oatmeal makes for a really moist bread though, so I enjoy that 😉

You'll get a kick out of this. Today I made this bread and weighed the oats DRY like an idiot, THEN cooked them *headdesk* Needless to say it was no good and I'm trying again tomorrow. Should have watched your video first!
