Heey so I am a small baker myself. I run a small online based bakery. I have a brownie fudge cookie recipe of my own. It also turns out looking exactly like this! Nice crinkle on top and fudgie on the inside. But for the last few days I was failing to achieve that beautiful crinkle on top and I couldn’t figure out what I was doing wrong. Today after watching your video I realised that I am rushing more these days so I am adding the hot butter to the mix! Ah so relieved. Hopefully the next batch of cookies will be crinkly! These are AMAZING and hands down the best i've ever tasted. Used 75% dark and increased the sugar by 2-3gms to compensate and it was perfect! Mine didn't look the ones you have on your thumbnails but maybe that was achieved by flattening/shaping the dough a bit? Would also like to know if you would approve of a hint of chopped walnuts / pretzel pieces going in to add another layer personally? Or do you recommend / prefer em plain? Thank you

hiya there, i've been making your recipe twice (the texture is AMAZING! THANKS!) already but i couldn't seem to get that cracked surface on the cookies. My oven is over the stove type, and I discovered that the lowest shelf closer to fire will produce a pan of cookie batch that is taller/bulkier that those on the second or third shelves. would appreciate any feedback. thank you!

Ah I know what you mean, especially with the high chocolate content / low flour ratio. I really had to let mine sit and firm up for a good few minutes. I found these ''soft caramels'' by Werther's Originals at Ocado which worked brilliantly. They stayed lovely and soft even after completely cooling and didn't disturb the texture of the cookie so definitely give those a try. Used Guittard chocolate in my bake upon your recommendation and was not disappointed, truly delicious. Just ordered a bunch more 🙈

hi! so i made these cookies a couple of times and they’re AMAZING! and when i bake them, they’re usually in separate batches because i can’t fit all of them in one tray :p but by the time i go on to do the second batch, the dough have already lost its consistency and comes out tasting and looking differently. any tips on how to prevent this????

KAT win no very important you don’t chill it, you need to stick to the method as shown in the video otherwise the cookies won’t spread and crack or have that glossy finish :)

Anna Bookout they’re half sheet (I’m using a 2 oz cookie scoop) but they’re not super thick and don’t feel overt indulgent, just the right amount ;)

Hi Edd: I have two questions if you don't mind. How should I store Malden sea salt if I don't use it often? What size scoop do you use for the cookies? Store any salt in an airtight glass container so damp can't get into it. Glass won't react with the salt.

Hello! If a make half the recipe, should I beat the eggs and sugar for 5 minutes as well? I made those yesterday and it came with to shiny crust :( also it spread way more than yours in the oven. I didn't use parchment paper, just dusted a baking sheet witih flour and butter. And used a 60% chocolate. maybe the oven temperature was not right? (my gf oven is not very good). I followed the other timings and things exaclty.

I wanted to know of how many grams for the two large eggs? Sizes might vary from countries so if I used eggs (large sizes according to my country and might differ with yours) would it affect the recipe?

Mizu chan you're doing the right thing, just weigh the eggs. He's mentioning grams instead of size just for that reason. A medium egg can be different in size from country to country

No compound chocolate should never be used in my opinion, it’s just cocoa powder and oil, it will throw off the taste texture and look of any recipe that calls for chocolate

TerminalNick it’s very hard to know what went wrong without knowing more detail. But from other people’s past problem, the likely issue is temperature or time. If the chocolate mixture is too hot when added to the eggs it makes it set prematurely and prevents cracking. The same is true if the batter isn’t scooped and baked immediately after making

Without seeing the cookies it’s hard to know but my guess was either the leavener wasn’t added or something with the mixing was off (either the chocolate mixture was added whilst too hot setting the dough too quickly, or the cookie dough was left to sit too long before being baked, it could also be down to the chocolate used)

I used 85% chocolate bar. The melted chocolate wasn’t hot as I was afraid it would cook the eggs and I did add baking powder. The cookies were baked right after I finished scooping. Or should I use chocolate chips instead? : /

Nadhirah Razak it’s hard to know without knowing exactly how you made the batch but be likely culprits are that the chocolate mixture became way too cool when mixed with the egg (this would explain them being flat) also the batter doesn’t really like sitting, it’s best if you can bake them on two trays at the same time. Hope that helps :)

mrs voice if you’re buying your eggs in the UK, then the sizes, large medium etc, are standardised so you don’t need the exact weight. A UK large egg legally has to weigh 63-73g
