Delicate Flowah the mascarpone really makes the tiramisu flavour come to life but you could use cream cheese (although not cold like the mascarpone it’ll need nesting first) or just a vanilla and rum whipped cream

The cookies will keep at room temp but once filled yes they’re best stored in the fridge

Hi Edd, sorry to ask such dull questions but do you have any recommendations as to where you can get good quality large baking sheets and ice-cream scoops like the ones used in the video in the UK? Am having a bit of trouble, particularly with ice cream scoops as the levers always break in my experience! Thank you very much - have been enjoying your recipes for many years now and they are often my go to! Can't wait for the new book!

Ha don’t worry I’m the baking nerd that likes those questions 😂 I get my trays from Nordic Ware and the scoops are trickier but Nisbets sell some although tricky to get good quality

How long does these last outside of the fridge? Does the filling melt or get runny after a while or does it hold its shape?

The cookies themselves will last for about 4 days kept in a sealed container but once filled they need to be refrigerated and they’ll keep for 2-3 days

I would have used freeze dried coffee for the browned butter so we didn’t have to strain it

You can do that if you like but I don’t really like the flavour of instant coffee but it’s your preference

Why don't you just measure the temperature you want? That would alleviate the imprecision of timing.
