There are a lot of factors that go into that, but some good basic camera guidelines: shoot and edit at 24 frames a second; generally, set your shutter speed to 1/48, or 1/50 if that's as close as your camera will get. Shoot with moderately low f-stops to get more depth of field, but not so low you can't keep the subject in focus. Find out what the native iso is for your camera and shoot at that setting if you can, add lights if it's too dark. Shoot in a flat, low contrast picture profile and learn how to color grade.

Where do you find or how do you make the background to replace the green screen? Like in 6:14. Do you find images or is it 3D modelled?

That particular scene is a combination of some models we bought, and some custom modeling in cinema4d, and some stock images. You can find 3d models on turbosquid or cgtrader for higher cost, or someplace like daz3d or renderosity on the cheaper end, but a lot of that is still really good. You can find awesome stock images on textures.com, or just through google searches filtered for reuse in your search settings.
