I wasn’t hungry in the afternoon so I put my Sunday roast in the microwave and forgot about it, woke up at midnight and felt peckish so I tried this but didn’t leave it as lumpy I mashed it with a potato masher and I have to say it was absolutely beautiful!! Can’t believe all the extra Sunday roast left overs that we have thrown over the years, I don’t think anything will ever be thrown away in the future after a veg dinner, just to add I added a bit of mayo over the top and it was so good. I’m going to not mix it all up as much after watching this. Thankyou for sharing

Yes, we would use leftover boiled potato, cabbage, turnip greens and either salt meat (from the boil dinner) or ham.....fried onions, and meat then add the mash....mix and let a crust develop. My ancestors were Welsh, but in NL we have a mishmash of UK culture.

Yes, you have that pretty much spot on! Basically, mash up and fry any leftovers based on cabbage and mashed potato :) I used to like this on toast!

I'm in Canada and my mum always made us bubble and squeak just with cabbage and potatoes... I cant wait to try this with all the leftovers!! Thanks so much. Will also be giving your pie and mash recipe a go.

I like to cook it in butter so it browns and crisps up the top and bottom like a pancake. Then put a knob of butter on the top and a splash of tomato sauce😂

i put onions in mine and chop the baconin to cubes and fry with the onions then add rest of ingrediants in the pan

Every had this then Microwaves came out i can still remember when the Sunday dinners were left in the oven on a low heat if me Dad was at work on a Sunday ,Nice hard crust on the top of the Mash

I roll it in balls, roll in flour then fry to make little crispy bites. I usually add onions but I tried yours without and it is much better. More veg taste.

So I'm going to hunt down the waiter in London who told this US visitor it was sunny side up egg with grilled ham, the egg being the bubble and the ham coming from a pig that squeaked. I hope he had a good laugh in the back room with his "mates".

Hi Jim. Ham and Eggs is indeed a very British dish, but sadly your waiter is slightly mistaken. He probably had the very best of intentions, but this is the real bubble and squeak. Give it a go!

Me ole man use to make Bubble & Squeak every Monday evening, as we all hated veg and did our best not to eat it, despite all the clips around the ear and threats that we wasn't go back outside after an hour he'd give up, yet what was so funny was all us little shytes who refused to eat their veg would be hovering around like flies round shyte watching him cook it with our mouths watering and asking for some his answer was always the same no it's got veg in it and you don't like veg do you pmsl. He had my Mum well sussed, if we did eat all the veg it was three things 1, Mum let us put ketchup on it, 2 she let us put a load of vinegar on it or she would eat the veg on our behalf lol, he didn't like this as his portion size of bubble & Squeak shrank, over time his Bubble and Squeak days diminished as we all eventually ate our veg. I've had it at cafes but having a bash at making it tomorrow, was going to skip the roast spuds but was going to use boiled some then make some mash, then add some Greens broken down Brussel Sprouts some carrots onion & Peas having it with a very cheeky Fry Up full Monty inc Black Pudding.

I just made this for breakfast, the only thing that made me cringe was you dolloping the mixture in cold oil on the hob, most of that fat would of instantly been soaked up into the mixture, for anyone reading, make sure the fat is nice and hot when putting your bubble and squeak mixture into the pan so the oil doesnt soak through into the mixture, it looks yum though apart from that (personal gripe)

It doesn’t really matter whether the oil is hot or cold. The bubble mixture will still absorb most of the oil or fate that is in the pan. The reason I place the mixture in the pan whilst it is still relatively cold is to ensure that the mixture cooks all of the way through. The hotter the oil/fat, the more likely you are to just burn the outside and not heat the middle.

Watching from Canada. With British parents this was a staple for Monday dinner growing up. I have recently had a craving for bubble and squeak and this video inspired me. Can it be oven baked vs frying? I would not be using any meat.

Thanks for commenting. I should think baking it would be fine. However, it could dry out a bit, so keep an eye on that.

I would add a large knob of butter to the oil in the pan, let it get bubbly hot then add B&S patties coated in plain flour. I would leave out the Wooster sauce.

Mum's Bubble and Squeak was a different cook up to yours, that said yours did look good. Mum's was like you said the full roast leftover's. Carrots, peas.green beans, savoy cabbage, parsnips, swede, homemade yorkshire puddings and roast spuds.. bubble and squeak was served on the Monday with cold sliced meat, left overs.. So tasty.. especially with my favourite brown Sauce. Oh I miss mum's cooking..

Pammi, there is no right or wrong to a decent bubble. Mine here was just basic leftovers. My Nan would literally scrape the plates for her bubble pot years ago. Some people might be put off by that these days, but needs must years ago.

I came looking for this recipe as I thought you could enlighten me on the proper way.. plus your Nan's method sounds like my Nan, she would say eat or go hungry.. I guess some would be put off but to me it's hearing the sounds of the happy times and the taste of good honest cooking and I wanted to find a recipe to impress my hubby. It's actually made from pancake batter Justin, with eggs, flour, and milk or water. You can also make 'Toad in the hole' which are sausages baked in batter 😊
