Hey friends and welcome!🌞 In this budget friendly vegan what I eat in a week I share lots of easy, big meals, either for you to have left overs or for you to share with friends, family or other loved ones! I also bring you along in making oat milk, sauerkraut and lots of multipurpose sauces that'll keep things flavourful!

sauce for rice paper wraps:
1/2 orange juice
1 tbsp soya sauce
1/2 tbsp rice vinegar
sriracha to taste
2 tbsp PB
Tomato Sauce:
1 small onion
4 cloves garlic
1 large can crushed tomatoes
1 tbsp olive oil
1 tsp crushed rosemary ( I crush mine in a mortar and pestle )
2 tsp oregano
2 tsp basil
2 bay leaves ( optional )
1 tbsp balsamic vinegar ( optional )
1 - 2 tsp salt ( season to taste )
1 tsp black pepper ( or to taste )
1/2 tsp chilli flakes ( or to taste )
- dice onion small and mince garlic. Heat a large pan on low-medium heat and add olive oil. Once hot, add onion and garlic. Cook until they turn translucent and slightly brown.
- Add crushed rosemary, oregano, basil, salt, pepper and chilli flakes to the pan and allow them to warm up for 30-45 seconds. Add crushed tomatoes, bay leaves and balsamic vinegar. Turn on low heat and cook for at least 15 minutes. But I would ( and did ) go for an hour.
- serve with whatever pasta your heart desires!
Oat milk:
4 cups ice cold water ( put water in the freezer for 20-30 min )
1 cup rolled oats
1 tbsp maple syrup ( more if you desire - or none )
- put everything in a blender and blend for about 20-30 seconds. Run through a nut milk bag, but don't squeeze it!
- Lasts in the fridge for 4-6 days
- Using ice cold water and a nut milk bag are the most important aspects to this recipe. A cheese cloth simply won’t cut it for oat milk. You can find an inexpensive nut milk bag on amazon and I highly suggest getting one!
- Home made oat milk is not great heated up ( think about when you make oats and how they get sticky, slimy and thick ) so this is a great recipe for cold brew, cereal, smoothies, protein shakes...
- Store bought oat milk has gums and fillers and that’s why you are able to heat them. This is why I'm experimenting with enzymes!

Crispy tofu:
1 block firm or extra firm tofu
1 tbsp flour of choice
1 tsp salt
1/2 tbsp olive oil
1 tbsp bread crumbs ( sub for more flour )
- pre-heat oven at 400F
- cube your tofu into desired size and place into a bowl
- add flour, salt and bread crumbs then mix until the tofu is coated. Drizzle on oil and toss again.
- Place on a baking sheet lined with parchment paper or a silicone mat.
- bake in the oven for 15-18 minutes or until slightly golden. Without moving or flipping the tofu, turn the oven on broil for 3-5 minutes or until the tops of the tofu are golden brown.
- serve!
sauce for the rice veggie bowl:
2 tbsp hoisin sauce
1 tbsp soya sauce
1 tbsp rice vinegar ( sub lime juice )
1 heaping tbsp red miso paste
1 tbsp PB
1/2 tsp sesame oil
1 tsp sriracha ( or to taste )
Splash of water, if needed!

Hope no one feels offended by this, buuuut been wanting to comment this for a while now. To anyone who is interested in buying AG Greens I would recommend watching Abbey Sharps Video about Greens powders, roughly broken down the facts are, it’s not a replacement for veggies and fruits since it has no fiber and all these fancy extra add ins like mushroom, roots or whatever have no official, reliable studies proofing their effects and we don‘t know in which amount they are in there, so likely they have no effect. If you like the taste and the placebo-effect makes you feel better, great, but for someone like Julia who eats soooo many different fruits and veg it’s not necessary at all. Spending your money (a whole lot since it’s VERY expensive) on fresh fruit and veg is definitely superior🌱 I personally could never bring myself to spend so much on just a powder and I just can’t afford it🥴 If you read this, thanks and have a great day🫶✨

Good points however green powders are great as they contain high levels of vitamins and minerals associated with maintaining a healthy immune system , Vitamin A has anti-inflammatory properties that enhance immunity and are also great for decreasing bloating and gut issues Aswell as Selenium is found in most greens powders, and is proven to help the immune system fight infection, so it’s very good for the gut and immune system however☺️

I don't agree with advertising green powders but abbey sharp is an idiot for a plethora of other things she says that go against top nutrition research

Thank you for this comment, I totally agree, and I too are a viewer of Abbey Sharp! Most of the vitamins that are in this powder are only at small levels, so they really don’t make much of an impact overall. It is especially very costly for people who already get lots of fibre in their diet :)

No offence taken. I like Julia but I do think powders are just another thing people buy just because influencers say “it’s so good.” You can get every nutrient you need from eating real foods and not processed cr@p. IMO, total waste of money. I’d rather spend my money on real food instead of a packet of powder that’ll sit in the back of the cupboard for months on end when that craze is over and another one starts and it’ll to go with the other packets of cr@p I purchased because someone on the internet said it’s “so good.” Good golly, “we” do buy some shit we wouldn’t normally buy because a stranger on the internet “told” us to. Humans have become even more stupid than ever. 🤯😱😂

I dont know if you already know this but you can fry green bananas. you just slice them into thin circle and they taste delicious. Dont know if they are common in The US, but in my country they sure are. we eat them with sliced cabage, tomato sauce, and sprinkled cheese (sometimes with meat).

You mentioned the rice noodle bowl and I thought “that sounds so good” and was about to text my boyfriend to pick up the ingredients from the grocery when I realized I HAD THEM ALL HERE ALREADY!!! I think being creative is where I need to get better where budgeting is concerned and using the stuff I already have!

Maybe you know this already but you can save the outer leaves of cabbage to put at the top of the jar to keep the chopped part submerged in the water. Or maybe there's a reason you do it with plastic??

Love your videos!!! Mmmmmm, going to make the pasta for dinner tonight! Oh, just a little info, but try not to "heat" anything made of "plastic" in your microwave (I noticed you put what looked like a small plastic container for reheating) because many plastics contain harmful chemicals/carcinogens, such as Bisphenol A (BPA) and phthalates). Instead, transfer to microwave-safe glass or ceramic container(s). Some plastics indicate "microwave safe", however, I myself never microwave any plastics whatsoever. Cheers!!

I always love the budget friendly videos! Cooking the beans in the peanut sauce is brilliant, I'll definitely try that one! I do have to say though that I have to agree with you that partnering with athletic greens for this video is not the best choice. I don't understand why you use that in the first place since you get plenty of greens in your diet and don't think you really need it, but ofc it's up to you to use and great if it makes you feel great. Just want to put out there that for most people the investment is probably not worth it. Just eat veggies and you get all the nutrients that green's powders give you for a way lower price and with the added bonus of actually getting full from it. If you can afford it and struggle getting enough veggies in your diet, go for it, but I don't really think it's worth it for 90% of people, esp vegans. No offence to you Julia, just putting my doubts about the usefulness of the product here esp in context of a budget friendly video.

On a calorie for calorie standpoint (which is very very important when it comes to budgeting) cashews could be cheaper than tofu wich is often only about 360 calories for a 400g block wich is the same as about 65g cashews
