I love watching other sawhorse build videos where they say cheap and fast...and then proceeds to embark on the most complicated, intricate sawhorse...where at the end I don't even think its a good design, and I'm like yeah I'll just buy the $25 plastic two-pack cheapos from HD. You're video is true to the name

Nice idea. A few points to consider: price per unit (compared to 2x4 lumber), weight (you can cut a hole in the center to make it lighter) and maintainability (most 2x4 designs allow to replace the top board after it gets chipped by saw cuts, here you can make it shorter and get a clean edge).

Nice for a flat floor, but I think it would be hard to get to sit correctly outside on uneven terrain.

Nice idea and not a bad design at all to work with sheet goods, but I think you really underestimate the value of the traditional design in many other scenarios, for instance working with big beams and rough lumber, which in your sawhorse would be very unstable due to the mid support. Also these are sure much faster to build, but not that cheap since OSB is very expensive right now whereas you can even use reclaimed wood to build the traditional ones tuning the design and measurements as needed.

Yes traditional ones are stronger, but quite limited. You can build these in stronger plywood and they can handle a lot of weight. The idea comes from Asia where most people build sawhorses like this.
