Atleast salt should be applied on fish and then mix in batter. It's a basic common sense. If you eat just the way it's shown in a video it will not taste good because lack of seasoning.

What makes you say that? You can def enjoy some good fish even without the salt (ex: sushi), hint of chutney would be the perfect condiment or maybe they season it with salt at the end just like fries to prevent the fish from releasing water and making the fried crust soggy.
