Since it's the month of Ramadan, I decided to do my favourite dessert, Malida. Here's a quick and simple recipe for it. Malida is made with Buss-up-Shut roti/ Paratha and spices and milk are added to it to give it a phenomenal flavour. Here are the ingredients you will need.
This recipe will yield 50 Malidas.
For the Buss-up-Shut:
3 1/2 cups of flour
3 1/2 tsps of baking powder
1 tbsp of ghee to knead the dough and more for cooking the roti
1 1/2 tbsp crisco or cookeen and more for cooking the roti
1 1/2 tbsp of full cream milk powder
1 1/2 tbsp of brown sugar
1 tsp salt
water to knead a soft dough
For the Malida:
3 Buss-up-Shut/Paratha roti
1 whole dry coconut, grated finely
1/4 cup of condensed milk or more if you want
1 1/2 tsp ground cinnamon
2 tsps vanilla essence
1 tbsp butter
raisins, cherries or nuts (optional)

I usually patch the coconut a bit and i add a dash of blackpepper love these so much it is a must for me every eid

I think I've it before when I was much younger growing up in Trini cause my grandma is Hindu and she always praise but my grandpa is Muslim so she must of made it also. I love all Trini Food I greedy like you !! Lol !! 😁😁

It has been 10 years since leaving Trinidad! i lived in Toronto for 9 years n went to so called " Trini stores" and the taste is...AWFUL! then after moving back to the Caribbean m living in Barbados, i missed my Trini food so I used to look on youtube from the years 2010 - 2015, some were good but not authentic. Since u started in 2016, I been following you and you is ah BOSS!!!!!!! right now living in Guyana n i tell all the people here to check out your channel n facebook page! keep it up!!!!!!!

Although I've been married for 35yrs this is the first time I'm going to try making it for my hubby who's Muslim... lol. In laws used to make it for me as I never had the time but I do now. I've been searching for this recipe and thank you lots... I'm making for Eid this year all by myself 😉

Wish you would refer to our Indian food by the proper name .Paratha ,Sada or Sakal roti.These foods are served at Religious festivals too.

Maleeda is one of my favourites, and it killed me when you said that you hated raisins because I hate raisins too 😂. I never heard of coconut in the maleeda before so I'll give it a shot this weekend!

Lol, I would only eat it in currants roll. Yeah, the coconut is what gives it a distinct flavour. Let me know how it turns out!

I remember this very well but made a bit different not adding the coconut but I will try this and can I add cardamom. PS. Your Mom must have been a knockout as a teenager you girls are beautiful you need to post a pic of you Mom in her younger years blessings

very interesting recipe, i have never had these, will try them for sure , I tried your previous buss up shut recipe after years trying other recipes and yours was hands down the best , i know there was no milk or sugar in there, did u just use the milk and sugar in this one because of this recipe ? I will also try it out this way, sure it will be delicious

You'll enjoy these, try it! That's awesome! Yes you can put milk and sugar in it but I am not used to doing that. I just did it because this was a dessert. Hope you enjoy this one!

Nice tip with folding the paratha. I usually just flip the dough 4 times then seal it . I didn't realize that rolling it in gives it layers.

I like your recipe but I roast my coconut in the oven for a few minutes also I put a pinch of black pepper that's way my mom made it.

Yes you can but the coconut is what gives the distinct flavour so I highly recommend using it.

Do you have a recipe for fish choka? Do I fry the fish first or steam? And then do I chunkay after i flake the fish? Help!! :)

+karenandisa hey, you can fry or steam but no chunkaying. Just season it up well with green seasoning and salt and black pepper
