If you're using charcoal, you keep the grill open to increase air circulation and heat. If it's propane, you do the opposite where closing the grill turns it into an oven since air flow is less critical.

I'd always been told close the grill to cook faster for GAS and the opposite for coals. The propane system is oxygenated and so will combust with a closed lid but restricting oxygen flow for coals will make them burn lower and burn cooler...

Bingo. Closing a propane grill does turn it into more of an oven, but closing a charcoal grill will just starve the fire of oxygen. Good for things like smoking low and slow, not so good for searing

Yes, this. Closing a charcoal grill works for thicker meats in that you slow it down so the interior cooks without burning the outside. The “rule” is you close it for anything thicker than your palm. Also, closing the lid eliminates flare ups.

The best reason to cook outside, even if it’s a gas grill, is to keep your house from overheating. Our cabin has no a/c so it’s great to have an outdoor cooking option. I definitely use the cast iron out there!

The summer kitchen principle. My grandparents' house, in the Polish countryside, still has one, but they use it as storage now. When I also used to live in the countryside as a kid, our house also had one, but it got turned into lodgins for Mr Marian, an older gent that worked for my dad as a gardener/handyman/etc. and once brought me a dead mole skewered on a knive.

Even in summer, though, along the coast or up in the mountains it tends to stay under 100F most of the time. And if they’re spending most of their time outside, an A/C isn’t really necessary

I feel like the "open grill" vs "closed grill" is only neutral when you're grilling in a place where the air can be compared to an oven. When in the -10 degrees Celsius Canadian winter and you're out there grilling, you're probably gonna want to keep the grill closed.

Best thing about a grill is that you have the ability to start it up and get cooking instantly, and then if you want the smoky charcoal flavor, you just grab a handful of it, light that stuff on fire, or any other wood, and then set it in the grill in the smoking tray while you cook.

I think the lid thing might be more relevant with gas grills. I've definitely had more flare-ups while closing the lid then keeping it open with gas. Also, I feel like multiple flips is better for newbies, especially if they aren't using a thermometer - if you don't know what you're looking for in a sear, it's better to check then let it burn or overcook the inside

For the "is a hotdog a sandwich" question: It depends on if you choose RAR (Rules As Retold) or RAI (Rules As Intended), as all other arguments trace back to them. Following the mythical story of Lord Montague, the Earl of Sandwich, the sandwich was made so the lord could eat roast beef between two pieces of bread (RAR) with one hand so he didn't need to worry about getting his hands, and thus cards, dirty while playing cards with his buddies (RAI). A hotdog by itself (sans bun) is not a sandwich. A hotdog on an undamaged, hinged bun is a sandwich according to RAI, but not RAR. A hotdog between two slices of bread is a sandwich according to both RAR and RAI. Funny enough, if your hinged hotdog bun splits along the hinge, it becomes a sandwich according to RAR, as it is now two different pieces of bread. Other, non-bread containers (such as the chicken breasts of the KFC double down) would not qualify according to RAR, but it could be argued as a sandwich with RAI only if what is contained is messier than the greasy "buns". The question isn't really "is a hotdog a sandwich", it is more like "do you choose RAR or RAI when it comes to Lord Montague's namesake?" Side Note: he he, sandwich on RAI. I just got that at the end of typing this. Quality pun.

Surely the materials either matter or they don't. Furthermore, "[a] hotdog by itself (sans bun)" is not only not a sandwich, it's not even a hot dog; it's just a frankfurter (or other sausage). A hot dog (or hotdog) is specifically a sausage contained in a split bread roll.

@@Smithers888 On your first point, you're being needlessly pedantic. RAR would be meat between two pieces of bread. You misquoted me, as I never typed "roast beef between two pieces of bread". With RAR, the argument is less about what is contained as much as it is the container. I did not imply that only roast beef as a filling made it a sandwich. On the second, fair point. But for the sake of argument, the term frankfurter is pretty much unused as the term hotdog is used ubiquitously for the sausage, both on and off a bun. Many dishes that contain frankfurters, but have no bun, already exist, and they are always called and labeled as hotdogs in those dishes. The same linguistic change that effected the frankfurter is why a hamburger is no longer called a hamburger sandwich. If we brought back this outdated terminology, we could call a hotdog on a bun a hotdog sandwich, regardless of whether or not it actually qualifies as such. For clarification, RAR should be "meat, or similar filling, held between two pieces of bread", while RAI should be "any edible filling contained by an edible container that is meant to be eaten out of hand, and the container allows one to eat the filling with less mess than if one would it the filling alone out of hand." The working definitions aren't perfect, but they seem better suited to the task than most proposals I have heard.

Multiple flips is a surefire way of cooking any red meat properly. It ensures a more even cook, you can make sure it doesn't get too dark on either side, keep an eye on things, and it'll probably even cook quicker due to the heat circulation.

Certified grilling dad, here.I grill almost every day. Have a gas and charcoal. Some stuff I like on propane (basically stuff that's not too fatty), most I like on charcoal. The ease of propane is hard to beat, but charcoal flavor is far superior.

As someone who always used charcoal growing up, I was never a believer in gas grills until I worked at a restaurant. I bring my own food to grill at work because a good gas grill is way more consistent. And everything I cook there turns out way better than with charcoal. One theory is that a lot of the grill flavor actually comes from the grease coming from the food falling into the heat and then vaporizing and covering the food. The only thing you are missing is the "smokiness" if you don't add wood or wood chips to the gas grill.

I'm pretty sure if anything, with a charcoal grill anyway, closed grill makes it lose heat. Sure you're insulating the heat inside the grill, but because of the restricted the airflow, you're not only getting less oxygen as you pointed out, but you're also stopping more smoke from escaping, which actively displaces the oxygen and slowly suffocates the charcoal. If anything, on a charcoal grill, closed grill is for things that need to be cooked at a lower temperature for a longer amount of time. Whereas open grill is for things that are cooked quickly on a high heat.

Blind taste tests with set amounts of time (maybe something like 10 min, 20 min, and 45 min) done on all 3 options; charcoal, gas, and the combo I mentioned. Maybe on the charcoal side do a lighter fluid vs no lighter fluid, again with blind taste tests. I know these videos aren't meant to be scientific, but I feel like this topic in particular was hurt by the lack of anonymity in the food being tasted.

They should weigh the coals right after done cooking to see which grill was more efficient. That is probably the only variable that will have been different.

Closed and open grill made a mistake. He moved the chop to a cooler spot on the closed grill to avoid flare ups. Great episode though.

For a gas grill I like the infrared gas which does more of an indirect heat. The flame hits a metal plate and diffuses the heat. It also doesn't flare up like a traditional gas or charcoal. It also doesn't give that gas grill taste.

The flip test results are skewed, flipping every 60 seconds thats crazy! I always flip 3 times myself, it gets a great grill lines pattern, and you get the same ring and tenderness as 1 flip

on my Weber Kettle with lump charcoal, I close the lid, open top & bottom vents, place meat opposite side of top vent and let the smoke draft from bottom to top. I always use a chimney charcoal starter.

Well, Alton Brown did advocate multiple flips, and he had his own myth crunching episode over a decade ago (incidentally, also while dodging trademark).

The test was pretty much flawed. But there is “no better way” it depends what you want. One flip definitely has a better crust. And if you like it maybe slightly less done, it has the bullseye in the middle. Both the less cook and the crust will result into another mouthfeel (and some people might prefer it). The multiple flip will result almost to a “sous vide” grade consistency. However some people might want to pull it off earlier. Obviously there is also even a difference in the resting period (I am sure that the two different methods have a difference in carrying over the doneness) - but to be honest, I am not sure about these difference. I guess that means more testing.

@@Dominikmj I don't think the band of overdone meat is worth the extra crust. Put it in the fire for a few seconds at the end or setup the chimney and finish it on that at super high heat
