I did that halfway through the roasting once but I forgot to reserve some drippings for my gravy so I haven't done it again but yes that works and falls well into the safety margins and your turkey is still nice and juicy.

My mom always made side dressing instead of stuffing. But instead of broth, she used the drippings from the turkey and butter. THAT gives you the moistness and extra flavor, while still being able to control your portions.

I spatchcock the turkey and cook it over the stuffing. That way the stuffing still gets the drippings, but the bird doesn't get overcooked. Its the Julia Childs method.

Fun fact: people tend to underlook their injuries on festivities because they'd rather be in pain but celebrating than spend the holiday at the hospital so really the busiest a hospital would be is the day after Thanksgiving rather than Thanksgiving itself

Okay but I want a mythical kitchen t-shirt that feature the kitcheneers as these animals: Racoon, ferret, rat, possum, mole. Outside of Josh being the racoon with the racoon's mask being Josh's glasses and Trevor as the ferret wearing a bandana you can freestyle the rest of it Edit: Though I'd prefer it if Lily's animal was holding a blowtorch. Last year I stuffed my turkey with more turkey. I couldn't find one the appropriate size for the amount of guests, so I used turkey breast steaks as stuffing. Worked perfectly and people were happy as the stuffed breast was super moist and juicy.

So for the mashed potatoes, I always use room-temp butter. We ALWAYS have room temp butter for holidays, we put it out in the morning! (Also we just keep butter on the counter for daily butter needs). I like room temp because it scrapes off the plate the best AND it does not cool down the potatoes! The cold butter cools down the potatoes!! Also for anyone else out there... make sure you heat up your cream!! Nothing worst then people adding cold cream and cold butter into the potatoes and cooling it down!

Yep I always have room temp butter out. If I want to make a sandwich I don't want to have to deal with cold butter. I *do* like the butter on a peanut butter and butter sandwich to be colder, so usually I make the sandwich in advance and put it in the fridge for a while

Great show! I like to spatchcock my turkey and then fill a paella pan with stuffing and lay the turkey on top to cook it. Sort of best of both worlds because you can have much more stuffing and it still gets all the cooking juices seeping into into the stuffing. Once the bird is done, I put the pan back in the oven to get a crispy crust on the stuffing while the turkey is resting.

Pro tip from my Mama - put the dressing *around* the bird, not in the bird. Reduces cooking time, the juice from the turkey gets into the stuffing, creating super moist (sorry) stuffing and the turkey isn't dry. Oh, and we use cornbread 😊 And don't even start on that cornstarch gravy that's the consistency of snot. No. Roux all the way. 😄Y'all did a great job with this today!

yeah i'm pretty sure I've never eating "stuffing". We usually make cornbread dressing. It uses cornbread instead of regular bread. using the turkey broth and other homemade stocks to moisten it, alongside like.... pieces of the turkey and/or chicken we cook. It's really good.

Because stuffing/dressing is the best part - you need to make a large amount and with 1 portion stuff the bird and with the other cook in the casserole dish. Then you combine them to get the better moist stuffed dressing with the crispier bits from the casserole AND then you have enough for everyone and leftovers.

Instead of making salmonella dough in your turkey. When you pull the turkey out of the oven, spoon some of the juices from the roasting pan into your stuffing, and cook it while the turkey rests. Gives the same result without the risk.

Aside from a little butter you don't pre-wet your bread when you stuff a turkey like when you bake it on the side - the wet comes from the turkey while it cooks (hence the bacterial risk from all those raw turkey juices).

My family has always cook the stuffing inside of the turkey. But once the turkey is to temp, we then take out the stuffing throw it in a casserole dish and put it back in the oven to finish cooking it so then you get some goo and some crisp. And you don’t risk over cooking your bird.

My pie crust method: coat the butter chunks in flour in the food processor, pulse it ONLY A BIT SO THE BUTTER BREAKS UP, then pop that into a bowl and slowly add cold water and mix with a pastry mixer thingie until it forms a dough. Has great flakiness, big old butter chunks that make it suuuuper flaky and delicious.

My family makes about thirty different pies, all different recipes, the day before Thanksgiving. We all make one each, and there’s usually about 30 people who come. It takes around 12 hours and three ovens. Also usually around eight of them are minis that the little ones make and there’s usually two or three that are no-bakes.

Roux gravy all the way 🙌 Thought I’d add my FAVORITE Thanksgiving recipe, that was never on our table growing up, but it’s a huge fav now. Matty Matheson had a carrot recipe, roasted with butter, garlic and herbs, maple syrup/honey , and top with dollops of ricotta cheese and crushed pistachios. His whole vice episode on Thanksgiving was honestly really good!

We always did part of the stuffing in the turkey and part outside so that we had enough for everyone. My Mom removed all of the stuffing from the bird before dinner and mixed the two so that you got the flavor of inside with the quantity of casserole. Best of both worlds.

My parents include ground pork sausage and the turkey giblets (precooked) in the stuffing. Also, to make sure it is safe to eat, I’ve seen people remove the stuffing and then microwave or bake it.

I have some hot takes when it comes to pies. First, I've never been a fan of pumpkin pie, even though I like a good PSL, so it's probably a texture thing for me, therefore it's not Thanksgiving without apple pie. Second, when I make my pie crust I use both butter and crisco. The crust is always buttery and flakey.

I didn't try it until I was an adult. But I *knew* I didn't like it. I'm guessing it's because I did actually know that I didn't like squash lol. I think I was in my 30's or 40's before I tried it. It has to have a decent amount of whipped topping, but I was missing out my whole life!

I get a moist turkey by following the way Martha Stewart did it with Snoop Dogg. Massage with butter, S&P, and cover with cheesecloth that's been soaking in a wine/butter mix. I believe it goes in the oven legs first. Baste every 30 min, turn the heat down after an hour. The last segment is to take the cheesecloth of and turn the cheesecloth around. I have successfully added more "roux" by mashing butter and flour together, then adding it. I do my stuffing the day before in my crock pot. One less thing to fuss with on the day

I've done it too. It works so well. I haven't had stuffing since I was a kid. I'd stuff the cavity with onions, herbs and possibly lemons if I'm feeling fancy. We call our dressing stuffing, but it's delicious. I'm probably going to get a premade turkey dinner from a local fancy grocery store chain. Their dressing is the exact same recipe my grandma and mom used. It's turkey slathered in gravy, mashed potatoes and dressing. Well worth the $13 cost for 1 meal. Plus only clean up is for vegetables.

Pie crust is best when you cube cold butter and flatten them with your fingers. Food processor and grating make the butter pieces too small

I always add poultry seasoning to my stuffing whether it’s stuffed or not!

I would like to say something regarding "you can't add more flour to your gravy" - if you add flour to a bit of cold stock or water and stir it until it has no lumps, then add a bit more stock you can absolutely add this to the gravy if it is too liquid. I have done that a few times without any issues. important is to make a slurry (like with cornstarch) beforehand.

My family does vegetarian thanksgiving so "stuffing" entails putting the stuffing atop halved butternut squash and roasting it, but we also have a whole other dish of stuffing. I respect the BPBs but crispy top is not sacrificable in our house, especially because the turkey flavour is not a factor.

So glad you agreed on the bird-stuffed stuffing. So many people that say that their casserole one is just as good probably never actually tasted them side by side. The texture and flavor can't help but be different, there is just no way. And there are plenty of ways to prevent the bird from getting too dried out in terms of foiling it and other techniques to prevent it from getting too dry. It's 100% worth it, and with thermometers these days, I just use one of the leave-in that I use for BBQ in the stuffing and I'm gtg. Anyone who says that non-stuffed stuffing is just as good is just lying to themselves.
