My favorite thing to do with beets is to pickle them. Soft boiled beets. Brine: One part vinegar, two parts sugar and three parts water. A few cloves and white peppercorns. Can be stored for a longer time. Good with meat and potato dishes.

Beets probably needed more time in the ground. You can blanch the beet tops and freeze them to eat like spinach later. Lots of good vitamins in them to feed your family. That bathtub looks like heaven to me. I have to soak my muscles/bones every night because of body pain (aftermath of chemo).

If you put a paper towel in all the way across the top, but out of the way of the sealer, the juice will be stopped by it and not get sucked into the seal. At least if there is not a ton of it. I do this with meat if I don't have time to freeze it first and too much blood is coming out of it when I try to seal it. It should work for beets, too.

🌿🐀RATS IN THE FIELD🐀🌿: Keep a bunch of greens. Scrub the beets (unpeeled, and with the root and 1.5 to 3 inches of stem remaining). Pressure cook according to size (for large beets in an automatic pressure cooker, set on high for 20 min, and follow with 10 min of natural release). Adjusting for your work speed, begin the greens with about 5 minutes left to pressure cook; first, wash them. Cut stems of greens and larger leaves to your preferred size. (If using an un-timed pressure cooker, remember to remove it from the heat at the right time.) Saute the greens with your prefered oil and seasonings, beginning with the stems, and adding the leaves when the stems are nearly tender enough. Take the beets out and cut them top to bottom, but from one side of the stem to the other side of the root. Plate your greens and top them with the beets, flat side down, as claws and as tails (or giving each person claws and tails, by preference). Most people will find the skin less pleasant, and the tail unpleasant, to eat. The first may, and the second should, be left behind. Before I got my pressure cooker, this recipe was called Roasted Rat Butts.

Is there a reason why you harvest the beetroot so small? Mine grow at least as big as two men's fists. And I harvest them throughout the year as I need them. So not all at once. I harvest the rest in late autumn and preserve them. Some are left over the winter and are only harvested in spring or left for seed.

@connieparcaro7502 I have not had that issue. In cleaning them, I let them sit in 1 gallon of water with 4 tablespoons of apple cider vinegar for about 20 minutes. Dirt washed away, and the skins have not tasted like dirt. But each person has different tastes, so I don't judge. Was just asking because the beets are very good for the heart and diabetes. In fact, eating the skins for me has helped to regulate my sugar levels.

Anyone that expects clean clothes, food in their belly or a clean bed to sleep in can expect to do chores. Nothing in a healthy world is handed out. You work for your living. All but two of those children are well on their way to being grown. The youngest two have to be shown as well. The kids have plenty of activities, horse lessons and competitions, baking, motorbike riding, off trail riding, paint ball games, soccer games in the pasture. You dont see their entire life. MYOB.

Beet greens and spinach are high in oxalates. Oxalates are one form of kidney stones. Oddly perpetual spinach, whisk is a Swiss chard , is not high in oxalates. My few stones have multiplied.
