I followed your recipe and measured the ingredients with a kitchen scale and timer. I made perfect butter rolls. All 24 of them were gone just by one 4-person meal. Thank you very much. BTW, to make the rolls look better, at the end of baking, I brushed a layer of scrambled egg and broiled them for 3 min then brushed the melt butter. Wow, it's beautiful.

Alejandro, I noticed in all the bread making videos I have watch of yours, you do the folding technique with the dough. Can you explain to me the benefits of doing that? I have not seen that before, nor have I heard of it, yet all your bread goods turn out wonderfully. Thank you and I wish for you to do more videos!

Hi Candee, The folding replaces of the punching down of a yeasted dough. Degassing and folding the dough does a few thing to the dough. • First Degassing expels the old carbon dioxide, making room for the yeast’s continuous production of new carbon dioxide. • Second, Folding is an extension of the kneading process, it gently helps to develop more strength and structure in the dough without damaging the gluten strands. • Third Folding helps to equalize the dough temperature. Thank you Alejandro for explaining the method to me. I have since made a couple loafs of bread using your technique and it makes for a wonderful bread. I will not be skipping these steps in the future. I bake with organic flour and in combination with the folding and the poolish/biga I have wonderful, tasting breads. Thank you so much! Hello Agustina, I recommend removing the buns from the pan immediately after baking if you are going to serve them right away. Otherwise, they can remain in the pan and cooled completely to be reheated for enjoying later. Perfect, I cook Thanksgiving for the family every year, definitely adding these to the menu, replacing the store bought that are usually brought over. We do lunch for Thanksgiving, what would be the best way to reheat if I make them a day ahead?

Hello Mark, Here are the instructions for: Baking the Butter Rolls Ahead and Reheating: • Bake the rolls as instructed or you can bake the rolls in a recyclable 9″ x 13″ aluminum pan if you like. • Cool the baked rolls for 20 minutes before wrapping them up tightly in aluminum foil. • Leave at room temperature overnight or freeze if making them more than 1 day in advance. (Thaw the rolls completely to room temperature before reheating) • Reheat the rolls in the foil in a 375℉ (190℃) pre-heated oven for 8 minutes. Serve warm!

Hello Tressa, It is nice to meet you. Yes, you can use a mixer to mix and knead any of my yeasted dough recipes. Kneading time will be between 6 to 8 minutes on speed 2 or 3. I'll check out you channel. Thank you for writing and have a great day!

Hello Joop, It is nice to meet you! Each recipe needs a different flour depended on the final texture and structure the baker wants to achieve in the end. This Butter Rolls need to be soft and tender so All-Purpose Flour is used. Bagels, on the other hand, needs to be chewy and crusty so Bread Flour (Strong Flour) is used. There are recipes like my Homemade Hamburger Buns recipe that calls for Bread Flour due to the other ingredients in the recipe that act as tenderizers in the gluten development in the dough. The difference between the flours is protein content. All-Purpose Flour has a protein content between 11% to 12% where Bread Flour (Strong Flour) has a protein content between 12% to 15%. I have found it is not necessary to go over 13% protein content to get good results. That is why I recommend King Arthur Bread Flour which has a protein content between 12.7%. Tried, and as with every other of your recipes, they turned out wonderful ! But what do you think. would it be possible to leave them to rest in the fridge overnight, and bake them first time in the morning :) ?

Hello Andrej, Yes, definitely can. I would recommend letting the rolls proof for at least 1 hour before refrigerating overnight (they should be almost double in size) and then bring the rolls to room temperature for at least 1 hour before baking for the best results.

Hello nur atirah ahmad mas dali , Both are fats that contribute tenderness to the baked good. The difference is that butter is a solid at room temperature so, while it melts in the oven, once the baked good cools to room temperature the butter inside will firm up again and will seem drier at first when you eat it. Where oil will stay liquid at room temperature which can create a baked good that will stay softer. The other difference is one is dairy based and is much more flavorful than vegetable or seed based fat. You can use a combination of both in a recipe with good results.

Hi, You make the most decadent things😋 I tried the recipe just now snd it's fermenting, but I noticed that my dough is not as moist and sticky as yours... it held its self well when I moved it to the sprayed bowel, any sugesstions!? Thank you in advance..

Hello Steve, Yes, you can make this the night before. Bake the rolls as instructed or you can bake the rolls in a recyclable 9" x 13" aluminum pan if you like. Cool the baked rolls for 20 minutes before wrapping them up tightly in aluminum foil. Leave at room temperature overnight. Reheat at rolls in the foil in a 375℉ preheated oven for 8 minutes. Serve warm! Have a wonderful Thanksgiving!

Steve Ferguson If you do the oven reheating method, do me a favor, please. Save out a couple rolls and try simply putting them in a ziploc-type sandwich bag (no need to get all the air out) and nuke them on high for about 10-15 seconds or until sufficiently warmed. Instant steamed rolls. Let me know which is better, or if there is much difference.

Hello Irene, Yes, you can make the recipe by replacing the dairy (whole milk and butter) with other substitutes. The key is to remember it is the fat in the dairy ingredients that makes these rolls fluffy soft and tender. I would recommend using whole fat replacements to get the best results. where my glass of milk at he hee yummy > can use rolls. for any thing , as a sausage egg sandwich , eat with chicken, turkey, like biscuit and jelly , ghoulish , server it with gravy over it . Bread crumbs. So many things. None of my breads go to waste
