Hi Everyone, For those wondering about malted milk powder, there are notes on the brand I use and alternatives in my blog post (link in the description). The malted milk powder does add to compensating on the flavour to make up for the lowered sugar amounts in this recipe to suit my taste compared to the sweetness of FA. :) With reducing the amount of sugar in the recipe or changing it up, I suggest trying the recipe as is first before making any changes as it is quite a delicate balance and any changes will affect the final texture of the cookie. Should you wish to lower the sugar in the recipe, you could but it will affect the results. Hope this helps. Sara

i just tried this recipe and here are some tips: -really, really beat that butter. i beat it for 5 minutes on medium-high, then another 6 minutes with the egg on medium. -don’t skimp on the sugar. you need enough for that caramelised flavour. -instead of malted milk powder, you can use milo -LEAVE IT TO REST! 3 days may seem like a lot, but it is worth it. i baked a batch right after making the recipe, 6 hours after, 24 hours after, 48 hours after and 72 hours after. the one left for 72 hours really tasted the best, while the one baked immediately tasted one-dimensional. -don’t eat it fresh out the oven. as it cools, it will become more crisp. overall, this is an amazing recipe. the cookie was light an airy, with delightful pockets of air in each bite. it only took 20 minutes to whip up, so it’s definitely worth a shot!

I made the cookies following your modifications. I did reduce the amount of sugar & used 1 tsp of salt. The cookies are still crispy, they just don’t spread as much. I don’t know if it’s because of the Milo but, my cookies tasted like Pepperidge Farm’s Double Chocolate Nantucket instead of FA. Still delicious & crunchy though.

Please make sure to beat the butter, sugar and eggs very very well. I beat it for like 10 minutes using a hand mixer. Tasted as good as Famous Amos. Thank you Buttermilk Pantry!!

I've followed baking this recipe without malted milk powder, and I have to say that the taste and texture is still very similar to FA's. Although her blog mentioned that malted milk powder is to compensate the reduction of sugar in the cookies, my cookies tasted sweet enough as compared to FA's. I would suggest putting less sugar in my opinion. I've always wanted to bake FA cookies but couldnt find the right recipe to follow. Really thankful Buttermilk Pantry for sharing this recipe!! This recipe will always be my go-to cookies recipes! :))

These are good! Combining with ideas form other recipes, I used browned butter, cut 30g of brown sugar, added 2 tbsp of cacao powder, added 2 tspn of espresso powder, added walnuts and chopped almonds, swapped half of the flour to bread flour, really undermixed the flour, baked for 14 mins. The result is fantastic! This is now my only keeper cookie recipe.

I didn't use milk powder. But they turned out super yummy. I live in Europe, where most cookies in the stores are crisp. When I bake I use American recipes and those cookies are often chewy, soft or cakey. I think American cookies are often intended to be soft, something that is not common here. My kids think those soft/chewy cookies are OK but were happy that I finally made some 'real' cookies. Crisp and light just like the 'normal' ones.

Reduced sugar to • 60g Light Brown Sugar • 30g Caster Sugar As i didnt have malt powder/horlicks i used "Milo-no-sugar" • 5g Milo Gao Kosong And also used 78% Dark Chocolate 90g chopped into tiny pieces instead of chocolate chips. I made this last night and baked it after I refrigerated the dough for only 30-45 minutes since I wanted to check if the dough was okay and they were so good. I reduced both sugar by 20g but they're still sweet for me. Crunchy and it felt like I can bite on almonds even though I didn't put any. My sister said they were good too. I used 3 in 1 milo powder since I don't have malted milk powder. Thank you for the recipe! I've never tried FA cookies before so I'm not sure if they have similar taste but I can say this recipe is really great! Oh! And I used hand mixer and spatula for those who don't have stand mixer like me. I'm going to bake the rest of the dough maybe tomorrow or the day after tomorrow yayy

This is AMAZING. No joke, you have to make these. They are so crispy, and the texture is almost the same as the real famous Amos. I halved the recipe, and made approximately 100 cookies, which was quite a lot! But they are so moreish and delicious that they would be gone in no time. I added macadamia nuts in mine to give an extra crunch and flavour. I swapped it with half of the chocolate chips, so there would be just the right amount of filling. I seriously recommend it this recipe, it is absolutely amazing!!

I tried this recipe without putting malt milk powder/milo or any sort. I replace it with 5g of unsweetened cocoa powder. It came out just as crunchy! Yay! However, it is better to invest in better quality chocolate chips and to add in a mixture of nuts because it was way toooooo sweet. One mistake i made was also using coarse sugar grains. Some of the sugar grains did not melt even after baking. I also did not use light brown sugar (mine was dark brown sugar according to the color) and the cookie turned out darker, not as pleasing to the eyes as the ones in this video. Nonetheless, the cookies taste great and are super crunchy even till the next day! I baked one batch immediate, one batch 10 hours later, and will continue to experiment to see the difference. First batch i baked immediate at 11 mins, it was sort of underbaked, so i put it in for another 1 min and it turned out fine. Next time i will try it with malt milk powder, light brown sugar, better quality chocolate chips, and LESS SUGAR. It is way too sweet!

OMG just baked the first batch of the cookies after 24 hours in the fridge and its amazingggg!! i only reduced 30g of brown sugar and it still tastes so good, not as sweet as famous amos. and i had to bake them at 180°C for 20 minutes, if not it will be chewy and underbaked. thanks for the recipe! this is my first time i succeeded making crunchy cookies 😂

Made these and they were a delight. Great malted flavour & crisp texture - just like the Famous Amos ones! A bit too sweet for me so would cut down on the sugar next round. But thanks for the recipe! ☺️

Bel how much sugar do you recommend to cut down?
@scinom
@scinom 4 жыл бұрын
Take note to cut down both types of sugar proportionately, if the ratio skews towards the brown sugar too much, your cookie will end up soft rather than crispy :)

I used 130 gram white sugar +63 brown sugar. White sugar has less moisture than brown so cookies turned out crisper.

This is going to be my go to cookies recipe from now on. The only thing i did differently was the cookie shape before baking, instead of making it tall cylinders i just made 3/4 tsp size balls and still worked fine. But this only works after 72h of refrigeration. Thank You so much for the recipe . And yes the 72 h wait is definitely worth it 👍🏼

Just tried to baking these!! Substituted the malt powder for milo... To those who wanna use milo, I would say u can! Cos I think its very similar to malt powder and 10g isn't alot... The taste is great.! The comments about it being too sweet... I mean it's FA.. Its meant to be sweet. I even upped thw choc chips so I could get choc chips in each morsel... The cookies are super crunchy when baked and left to cool... But not sure if it still crunchy... Wondering how to make them even crispier... Seems like it can do with more crunch... Anw. Would definitely make this recipe again! Thanks for the recipe!

@@reiswoo8132 i read somwhere egg white is the one that adds the crunchiness so i guess omit the yolk? And also reduce brown sugar, more white sugar

Edit: I baked the cookie after slightly more than 24 hours in the fridge. Lessening the sugar works & for further baking, I’ll decrease the sugar even more. It’s still very sweet for me. This recipe is almost perfect! Just adjust the sugar level accordingly. Add almond powder a little if you want that nutty taste. My dough is chilling in the fridge, can’t wait for 72 hours to end. Or at least 36 hours.. I made some changes. I lessened both brown & white sugars by 10g each, took out 2 tablespoons of flour & added 2 tablespoons of cocoa powder instead. I also added extra 2g of Horlicks on top of the 10g as per recipe. The dough tastes perfect! Can’t wait to bake them

9 hours later my first batch went out. Taste wise? Like those average online choc chic cookie recipe. Compared to the Famous Amos ones, this recipe missed that sliiiight nuttiness, caramelised & that X factor in it. She did mentioned thru her blog to make it even more famous amos-like cookie with crumbs, do punch on more sugar and wait for 72 hours then bake. Good thing is the look and crunchiness of the cookies are spot on! If u bake it right, it does turned out golden brown. Im definitely going to wait longer to bake for my second batch. Having high hope that the next batch will be superb. 🤞🏾
