I always keep my pumpkin seeds. I clean the pumpkin shreds off them and then sprinkle them with olive oil and salt and then roast them on an oven tray for about 10 minutes or until slightly golden. Best healthy snack. Thanks for sharing this recipe, I am 100% going to be making it.

Great recipe! I personally turn on my oven til about 350 F or 180 C. Put your butternut (works for pumpkins too) on a baking tray, put it in the oven for maybe 15 minutes, and you can peel and chop your squash much more easily. You can reduce the simmering time a bit, but not much. Enjoy.

I’ll definitely try it, I love butternut squash! To make it a bit more tender before cutting it, I remove the top and bottom part and then microwave it for 2 minutes. I wish I could buy Sloppy Papi in Europe though

I can’t wait to try this!! We like doing chicken chili and usually make it in the pressure cooker so the cut up chicken can be shredded easily, but I love the idea of the butternut squash. How/when would I do the butternut squash if I still wanted to do pressure cooker and/or I do have a Dutch oven, how would I get my chicken shreddable for this approach? Love your videos!!

To help with cutting the butternut squash, I cut one in half crosswise and pressure cook it in the instant pot. Then I can core and harvest the soft pulp with ease. Not cutting no peeling. I will try to cook it less to be able to cut it into cubes.

My local Safeway has butternut squash already cubed ( produce department) up, so as I I am legally blind I would probably use that instead of using a whole butternut squash and endangering my fingers.
