Here's the easiest way to peel and cut butternut squash (safely). I also show you how to make roasted butternut squash two different ways - cubes and halves.
Once you peel and cut butternut squash a few times you'll be a pro. It really does get easier the more you do it! You can enjoy butternut squash straight out of the oven, or transform it into several delicious recipes including my mashed butternut squash, kale and butternut squash frittata, roasted butternut squash soup and butternut squash romaine and goat cheese salad. I just found your channel and I’m so impressed-kind of binge watched a bunch of videos and signed up on your website. The soup and frittata looks amazing. One questions. Your sheet pans always look like new. When I roast veggies or meat I can never get it scrubbed completely clean, you know the olive oil leaves dark spots. What’s your secret to clean pans?

I’ve never eaten butternut squash and we just have 1 literally just sitting there at home and so my mom asked me to search up some recipes for it and that’s why I’m here lol

The skin of a butternut squash is edible and right under the skin is the healthiest and sweetest part. It only needs a bit longer to soften. Definitely worth it!

Roasted squash hummus is one of my favourite recipes. It’s what made me really start to like hummus. Also, anyone who feels their cutting board isn’t stable enough can put a damp cloth under it. This helps a lot. TFS

I'm roasting one in the oven right now. Split and scooped out. Olive oil all over, salt, pepper, garlic powder, cumin, smoked paprika. I bake them open side up. Let them cool. Scoop out the deliciousness. I love my butternut soup. Don't forget the pine nuts. Yes. I'm sorry. Canadians like their beer. I'm no different. My edit is a bit of brown sugar in the last 15 minutes. Gonna be great. Did I mention the pine nuts? They ARE worth it.

Coming from Tasmania, Australia butternut pumpkin is just about all we eat. The larger ones have no flavour in comparison and are sometimes more expensive. I didn't know there was so much mystery about how to cut them up?! Also you can eat the skin if you bake it or boil it, it goes soft and tastes good. You can puree it into a soup too and never know it's there.

I picked 50 squash from my garden. They last for a year and sometimes longer in a cool cellar :). I've made soup mixed with pumpkin, roasted like this, and have roastes in slices with the skin still on... Makes them good for dipping in an avocado, yogurt sauce:)

Thank you for sharing your tips and tricks. I also really appreciate your understanding that some of us may not have a microwave. I for one have never liked the taste of the food cooked in one tastes, also there's just me and my husband now, the kids are all grown and off microwaving in their own homes now :) I have always (with major difficulty) only cut it in half to roast it and I am looking to change things up and try something new, knowing how to cut it up safely fills me with the urge to go for it and switch things up. Maybe I can entice hubby to try it. Again, thank you. Have a glorious day!!!

I use a serrated/bread knife to slice the butternut. It grabs onto the skin much easier and does not slip. It is also not necessary to sharpen it as often as a normal knife. Thanks for wonderful videos!

Great tips thanks!! Butternut squash are soooo good!I clean and dry the seeds. Store in a cool dry spot and use to plant next year’s crop! Works like a charm.

Jamie Oliver said that it is unnecessary to peel them, I don't any more and find that I use them more as it is much quicker to prepare.

Greetings from England. Another well-presented video with some great tips. I use butternut squash with red onions, red peppers (capsicums) garlic, chilli pepper and sweet potato roasted in the oven. I add the soft roasted vegetables to stock and blend them to make a soup with freshly ground cumin which gives a lovely earthy taste that goes so well with these vegetables. Sometimes I add chopped fresh coriander at the end for a touch of India. Butternut squash is healthy and delicious!

Thanks for this! I love bn squash but it is daunting looking because it's so firm. I can already think of tons of things to fill the halves with like chili or tuna/chicken salad. And can I share a tip I recently I found on my own (I'm sure I'm not the first to do this) - it works for cleaning seed out of most anything. I'm a retired widow and I recently subscribed to a meal kit to start eating more healthy and the first one had a red colorado pepper in it. I cut the stem off and saw all the seeds (my first time cooking with peppers) and after looking at it for a few seconds a lightbulb went off and I went to my cutlery drawer and grabbed my grapefruit spoon! The large serrated edges were perfect to scrap out the seeds and was much quicker than using the point of a paring knife!

@@Downshiftology if you guys like the seeds, I would strongly encourage you to try squash oils. A local farm presses the seeds of butternut squash and other various pumpkin and the oils are amazing for salads or to garnish soups or risottos. www.wholeheartedfoods.com/

great video Lisa. You could apply the same strategy to spaghetti squash also except you would use a fork for the halves and no cubes practically speaking. I also like garlic salt to season mine.

I totally agree with you that the squash seeds are more flavorful and tender than the pumpkin seeds are. I roast both and sprinkle with sea salt or Himalayan Pink. Right now there are about 30 b nuts curing in my garage
