I just made this pudding. So very good and still warm. After it cools completely, plan to make a trifle with whipped cream and shortbread cookies. Topped with pecans and pieces of chocolate. Making your desserts each week and I think I shall never catch up. They are always so delicious and good for my soul to always have success with each recipe. Thanks again Stephanie!

I made this tonight and it was delicious!! For special occasions, my mother would make a butterscotch cream pie for dessert and this pudding tastes exactly like the filling for that pie. Yummy.

this is another one of my Favourite Pies as my Mom made it on special Occasions. she always used a double boiler I think as she never once showed any of us how she cooked?? I love this one of yours as you use whole Milk and dark Brown Sugar. I'll try this on Thanksgiving this year, thanks so much!! .I did find this recipe in Five Roses cookbook and it used Meringue but I always have problems cutting this pie without that Meringue slipping off the whole Pie

For custards and puddings you need eggs to thicken !!! But if you want to create custard or pudding without eggs ( won't be as rich) here's how !!! - ¾ Cup milk - 2 tbsp sugar (for butterscotch use brown sugar) - 2 tbsp custard powder or cornstarch - vanilla 1) on the hob mix everything... Once boiled cook for about 3 minutes until thick !!! 2) pour into glasses, chill and serve !!!!! To make a custard which is more of thick mixture not a pudding, use about half of the cornstarch /custard powder !!

Some people have had trouble with the cream cheese frosting due to the type of whipped cream. Try whipping the heavy cream separately to stiff peaks and then fold it into the cream cheese mixture. Also be sure your cream cheese is full fat not reduced fat.

I enjoy all your baking videos. I have been baking for about two years now and the only thing that I have a problem with is the heat settings on the stovetop. Medium low, medium high, low or whatever. It seems all the stove dials are different. I have an electric stove. In this recipe, when you are heating the milk, is there a temperature that the milk reaches when it simmers? I use a Thermapen thermometer and that would give me a better idea of when the milk reaches the proper temperature. I have made custards before without a problem but would like an idea of the correct temperature. I find it extremely helpful that you give the weights of ingredients in grams.

Hi, I tried this out yesterday and the flavour was awesome. It thickened exactly as it did on your video and everything. But the only problem was when it was served it was still a little runny. Thick but like custard and not like yours where when you scoop it on the spoon its like a mousse for instance. Could it be because I hadnt chilled it in the fridge for long enough? I had only put it in the fridge for about an hour. Do you think chilling it in the fridge overnight might cause it to set properly? Thanks for your recipe

It sounds like the pudding needed to be cooked a little longer in order for the cornstarch to thicken it. I would let it chill overnight as that will thicken it.

Richard Paul Good question. I've never actually thought about using this for a pie filling. Sounds like a good idea. I think it should be thick enough. You could always use 3 egg yolks, instead of 2 yolks and 1 egg as the recipe states. That would thicken up the filling a little.

How long it takes for the pudding to thicken really depends on the level of heat. If it took that long I would use a higher heat setting.

The brown sugar gives the pudding its butterscotch flavor. If you use white sugar than you would have a vanilla flavored pudding.

came out exactly as the video but 1 big flaw. does not taste like butterscotch. tasts like vanilla pudding so it threw me off. im not fond of vanilla extract so maybe i might try to leave that out next time.
