Today is Sunday and that means Sunday Dinner and Dessert today I'm making Old Fashion Peach Cobbler. The recipe for the crust is so simple and so buttery it takes less than 10 mins to mix up and the peach filling is so so good and can be used in other desserts as well!
Easy Buttery Pie Crust
1 1/4 Cup Flour 1 Stick Butter (cold and cut into pieces) 1/4 tsp Salt
1/4 Cup Ice Water
Combine flour and salt, mix chilled butter into flour until coarse crumbs form, add 1 Tbsp of cold water at a time until dough forms and comes together wrap and place in fridge at least 1 hour
Peach Cobbler Filling
3lbs Fresh Peaches 1/4 Cup Fresh Lemon Juice 1 Stick Butter
2 Cups Sugar 1 Tbsp Corn Starch 1 tsp Cinnamon
Preheat Oven to 375 Degrees Bake Bottom Crust (set aside to cool)
Cut up peaches (you can either remove or leave skin on) place in pan with lemon juice, butter, cornstarch, cinnamon and sugar and place over medium heat until peaches have softened just a bit and the sauce starts to thicken. Remove from heat and allow to cool before placing in bottom crust.
Once bottom crust and filling has cooled pour filling in and add decorative top with pie crust brush with melted butter and sprinkle on sugar and cinnamon
Bake for 25-30 mins or until top crust has browned serve with ice cream and cool whip! ENJOY!!
