I was making some cornbread last night and I mistakenly put water in the grains but then I added some milk and I was eating a piece of baked chicken a tiny piece fell in that I quickly pulled out. Then I mixed it together well and it was too liquidity. So much so I had to add some pancake mix instead of flour which was something I did on accident before and it came out amazing. I had to the refrigerator to get some butter but to my surprise I had none. I added the batter to the pan. Then I had to grab my red and yellow non stick cooking spray and before you know it i put it in the oven. And after several minutes of baking time I realized I forgot to add eggs. I contemplated on whether or not I should take it out and add eggs but then I just let it cook. And when I took it out of the oven it was a prettiest golden brown. Although during its cooking time I was worried it was not going to taste right. But to my surprise it came out delicious. So much so only a tiny portions was left at the end of the night. Today I found out I can find answers in the batter and within my movement something I figured out a a year ago.

Thanks. I was looking for years to see where in ancient India the roti we eat in Trinidad and Guyana comes from. This is exactly how we make our parata roti. We clap between our hands, some people put it in a container and shake it around, beat with beylna etc. It us flaky and soft n Delicious with duck curry.

In Malaysia we called it roti canai..mybe the process was slightly different.. mostly we dip in with dal gravy or curry gravy..to add on the taste we dip in too with sambal..a local famous food .
