Can you substitute canola oil with olive oil?

Mathew Da you can! just be careful because olive oil has a lower smoke point than canola oil - make sure it doesn't go past it or else it might have negative effects

On Asian night market stalls in Taiwan, we have a similar snack called 鹽素雞 (Yán sù jī), which we fry Basil leaves, and sometimes stalk was well, along with the chicken. Then similarly season with salt, pepper, and a little chili power for spice. Depending on the stall, the seasonings can vary from dry to wet, simple salt & pepper to some sort of glaze. In any case, your video reminded me of watching the stall owners fry up the 鹽素雞 (Salted plain chicken? google translate...) for a midnight snack. Try frying some Basil for a couple of seconds and adding it to the mix?

Looks yum! I've a suggestion, try double fry the chicken, it'll be more crunchy and it will release some of the soaked up oil.

I was a little skeptical of this recipe since it didn't use any sugar, but I resisted adding any until I tasted the reduced glaze. Impressed at how balanced it was despite the orange juice and rice vinegar (I'm guessing that the mirin gave it just enough sweetness).

Here in Vancouver almost all of our taiwanese restaurants have popcorn chicken which is basically small chunks of chicken that are fried, they are delicious,crispy and salty. Looks pretty much like what is shown in the video without the sauce.

You could try using tapioca starch instead of corn, it makes the sauce looks clearer :) And it can also be used when making egg drop soup

People wanting a substitute for Mirin, just dissolve 1-2 tsp of white caster sugar with 1/2 a cup of white wine :) or add some sugar to some sake :)
