Continuing from Part 1, here’s the usual quick translations for those who don’t really understand Cantonese or read Chinese subs. For this video, Remus is cooking “Fish maw ‘steak’ cooked in rich chicken broth with abalone sauce”. ⭐Ingredients --> Big fish maw, ginger, spring onions, shaoxing wine, abalone sauce, oyster sauce, light soy sauce, dark soy sauce, salt, brown sugar, corn starch and water. Firstly, he puts in slices of ginger and spring onions into a wok with hot water. Then he adds some shaoxing wine and the fish maw. This is to eliminate the fishy smell of any seafood, and then take out the fish maw. Next, he scooped some of the rich chicken broth into a heated pan. After that, he adds some abalone sauce which he has reserved from a previous video (from canned abalone). He added oyster sauce, light soy sauce, dark soy sauce, salt, and brown sugar. Try tasting to your liking. He adds more dark soy sauce to give it a better color. Next, add corn starch slurry slowly to the sauce, stirring it to the consistency that you like. Then pour the sauce on the fish maw. Remus said the rich chicken broth helps a lot in giving the taste just like those from restaurants that cook similar dishes/sauces for fish maw, sea cucumber and abalone. There are many uses with that chicken broth. He hopes that you can cook this and share it with your family. At the end of the video, he asked someone (I believe that person is his nephew according to his interview videos about how he film Remus Kitchen) how many points he will give the dish.
