Hi, I’m back with the usual quick translations for those who don’t really understand Cantonese or read Chinese subs. Today, Remus is cooking “Oyster stir fry with ginger and spring onions”. ⭐Ingredients are: Oysters, lots of ginger, lots of garlic, lots of spring onions, oil, and sauce ingredients (mentioned later below ⭐). Since he’s using so many ginger, garlic and spring onion… he doesn’t know what ingredient is the actual main “protagonist”. He uses 2 big spoonful of flour to clean the oysters. Remember to gently handle the oysters during cleaning. Rinse and repeat. Then the oysters are blanched quickly in boiling water around 30 seconds, and take it out of the water. Set it aside. Chopped each garlic in half. The ginger he bought wasn’t good, so he’s unhappy about it as he chopped it and decided not to use it. He sliced another ginger into large slices. He separates the white and green parts of the spring onion. ⭐The sauce ingredients are: Fish sauce, soy sauce, oyster sauce, salt, sugar, white pepper, cornstarch/corn flour and water. Then mix them well. For the sauce, he said you may not need to use all of it and depends on how much you want to use it. Then, he used a towel to absorb the water/moist from the oysters. Lightly pat dry them. Then add white pepper and corn flour to the oysters. The flour is to prevent more moisture from coming out. Stir fry the ginger, then garlic, then white part of the spring onion, till fragrant.. then take it out. Next add oyster, be careful of oil splash. The oil splattered at him, so he pretended as if he got shot, haha. Turn the oysters around. He said he will add more flour next time to lessen the oil splash. Take out the oysters and remove the oil leaving a bit of oil at the wok. Put all the ingredients back into the wok and slowly put in the sauce. Then add the green spring onions. Stir it a bit and then serve. He served it on a heated claypot. And the end, Remus said he loves eating oysters but cooking a tasty oyster dish is not easy. He’s quite happy with his dish even though he was like in a “war zone”. He said you should eat the dish immediately, because it will be watery if leave it too long.
