Nana - are you taking any request for desserts? There is a Lao dessert that I would like to learn how to make: kanom sunt and voon. I am sure my spelling is off. The only time I get these desserts is when I go back to Thailand in the Isan region. Thanks!

Peeling a cassava is much easier if you slit it on one side, then just peel off the skin with your fingers or with the help of a knife, and you’ll have it smoothly peeled. Also, you have to remove the core before grating it, or it will feel like you are eating bits of sawdust.

Do you have to make sure to get a particular variety of cassava? I know that some cassava contains cyanide and is very toxic if not processed correctly.

all kinds of cassava contains cyanide, but the sweet variety contains less of it. that's the kind they sell in supermarkets. I don't think anyone in America sells the bitter kind. In any case you just have to make sure to cook it thoroughly. don't eat raw, especially the peel.

Tienchai Phongkanphay I just listed coconut milk as an alternative for water. If you want to use the coconut milk, you use it instead of water.

when you use the fresh Casava, you also need tapioca flour to hold the cassava together and softer. Nana shred hers vey thin but mine is a bigger shred and when you eat it, you will taste the mun thone too.The reason salt is add to this is to cut out the sharp sweet taste to it This a lot different than what/how I make mine. everyone makes it different. The way I make it, after steaming, it is clear but towards white because I clean it several time.
