Cassava cake is one of my favorite snack. This is the first snack I baked when I migrated here in the US. I used to bake this every time we have party at home. Then you can start searching for Filipino cassava desserts because we have a few of them in our arsenal. The simplest one is boil it in coconut milk and coconut cream. Then when it's close to done, add in muscovado sugar (sub with brown sugar). Then there's cassava suman. This is a much involved process, but it's a labor of love. There's a steamed version, and one that includes pounding on the mortar. I don't remember how they're called now, I've been away from the motherland for so long I haven't cassava eaten in years.

I'm planning to bake Cassava cake but instead of using white sugar I will use jaggery. It will give a very heavenly flavour and a golden colour. I will put a drop of vanilla to give extra twist and aroma.
