भाई आप ने तो आसान बताया है। और एकदम लगा कि मेरी माँ या 80's के रसोई के घर खाना बना है या उस समय के लोगों से जो सिखा हो वो खाना बनायेगा ऐसा। उस समय 7 - 10 लोगों के परिवार में किसी सब्जी में आलू का रिवाज था। bt भिंडी में potato chanks उसकी लेस को कम करते हैं एंड करेले में उसकी कड़वाहट को और एक smooth texture (bite में ) मिलता है। Inshort,

If you add anything sour like aamchur powder in bhindi, you can cook it with lid. It will not be sticky.

My close friend Harman's wife, makes this amazing Bhindi. She skips the Dhania powder but adds a dash of Aamchur powder & some Tomato Ketchup. for the tanginess, just before adding the Bhindi pieces for frying. And she makes it in Mustard Oil. Just divine to taste with Phulkas and any Raita combo.❤
