Apparently the thick foam forms because spray drying removes most of the oils from the instant coffee. Similarly, adding a bit of olive oil to boiling bulgur wheat suppresses the foam and prevents it boiling over.

I should add a small amount of oil to the jar next time to see if that completely ruins the coffee. 😅

Actually there are a few expressions where "frappé" means cold. "Une bière frappée" for example is a cold beer.
