How to brew coffee using Cafec Deep 27 with ABACA+ filters. Four reliable recipes for different doses.
The main feature of the recipes - once you adjusted the grind size - you can use any dose (6, 10, 15, 20 g of coffee).
IMPORTANT: Make it drain after it "finished brewing". By letting it drip for 30-50 seconds we dramatically improve the flavor.
As for the water temperature - it's always the same - 90°C. At least for light roast.
GRIND SIZE
The most important - pat attention to the extraction or flavor. But the grind size to start from:
Comandante c40 - 18-20 clicks
Kinu m47 - 2.8-3.2
1zpresso q2 air - 1.5-2.2
The grind size will hugely depend on a coffee. If it's too intense - increase the grind size to make it lighter and more complex. Especially with anaerobic processed.
RECIPE 6-100
5 pours 20 g each. 20-40-60-80-100.
Let it bloom for 30 seconds after the first pour. Then - add water to the center when the previous is drained.
Take off the brewer when the drips aren't frequent.
RECIPE 10-160
5 pours. 30-60-90-120-160.
Let it bloom for 30 seconds after the first pour. Then - add water to the center when the previous is drained.
Take off the brewer when the drips aren't frequent.
RECIPE 15-250
4 pours. 30-80-160-250.
Let it bloom for 30 seconds after the first pour. Then - add make another spiral and continue to pour into the center. The rest of the pours - to the center. Add water when the previous portion is drained.
Take off the brewer when the drips aren't frequent.
RECIPE 20-300
3 pours. 100-200-300.
Skip the bloom. First pour - spiral. Then - add water when the previous portion is drained.
Take off the brewer when the drips aren't frequent.

I started to use it most of the time (especially with the 6 and 10 g recipes). But currently forcing myself to use 15 g recipes to win the championship 🏆

Wonderful! I'm getting a Deep 27 from Japan and I'm going to use a very small dose (8 g) but the few recipes I found always go for 12 g. Thank you! PS: I do wonder if it performs better than the v60 for small doses.

It's overall more interesting, especially with small doses. Because of that umami layer and simplicity of pouring (no technique required)

Thank you!) I've sent an email, because I have a glossy version of this stand. Not only matt which is currently on site. And on a glossy version, coaster sticks better. Should I send the matt version?

Abaca Deep 27 filter,is it a slow flow filter?

It's abaca+. Usual abaca+ seemed slowly that abaca. But on the deep 27 it looks very fast. Though, it takes a lot of time for dripping due to the high coffee column

Does Cafec 27 give good result on light roast bean?

I only tried it with a light roast. Rarely make medium roast in pour over. What this brewer gave me is an incredible body, nice refreshing acidity, but just the right amount. And the overall balance is interesting. Feels like a coffee brewed with sibarist filters (cup profile)

Interesting to hear about the experience. Did it work or not. I would start with the grind size which is around 600 microns and less. And if coffee wasn't good from the first try - better check it with the regular, stable recipe with the usual grind size to be sure it's good at all. I was disappointed yesterday with some coffee, but it wasn't my fault) tried every adjustment, coffee was just old (in terms of the crop). So I couldn't get rid of some unpleasant layer.

Tomorrow I will try the light roast Toraja bean anaerob fermentation ,using Cafe 27(resting time 2 weeks and I have to use up first my MokapotBlend). Will use Comandante X25 at 23 clicks. May I know,how much TDS level of water you usually use on your trial? The Roastery of my bean suggests 25-75 ppm water.Temp 90 C. Thank you for your help. @@wendstudio_coffee
