Easy Quick Fruit Cake Recipe OR you can call it a Fruit Butter Cake OR Fruity Pound Cake! It is actually a Cranberry Cake! Just in time for the festive Christmas season!
This soft cake is filled with fruits! You can add any dried fruit you like and cut them smaller before adding it! It is an all-in-one method, where you do not need to beat egg whites and mix them in separately.
This soft and fluffy cake is so easy to make and follow my simple recipe steps!
♣️ Ingredients:
Sugar 100g (1/2 cup)
Butter 100g (1/4 cup 3 tbsp)
2 Eggs (medium size)
Plain Flour 100g (3/4 cups)
Baking powder 1 teaspoon
Dried Cranberries [You can add any dried fruit you got!] 100g (1/2 cup)
Milk 3 tablespoons
Vanilla extract 1 teaspoon

Hi it depends on the speed, butter and if the sugar is very fine it’s quicker. So it took me 2-3 minutes to make it creamier. Hope this helps.

My measuring cup 1/4 cup is 30 ml is it fine to be used

The 1/4 cup measure for water is 60ml (the one I’ve got). The cup measurement is different for different ingredients. So if you can measure them with a scale, then I think it’s better to get them measured in metric units (g, ml). Hope this helps!

Hi, yes, it really depends on the speed, the type of butter and the size of the sugar granules. It took me 2-3 minutes to get a creamier texture. The butter I used is based on mostly vegetable fat (good for baking type). You could grind the sugar before using or get caster sugar (which is slightly expensive), this reduce the time too! good luck!
