Boil till thickens. Put small in water and if solidify immediately. It ready. Avoid over heating to prevent burning

Yes you can also use Parchment paper but I prefer silicone mat because the sugar sail comes out easily from the silicon mat than the parchment paper

Yes. Silicone Mould is already shaped while Silicone Mat is just flat and you shape it as desire when in use

No, not recommended. Best done same day of use. When done you may break into pieces and then freeze to keep the left over for a while.

Can't recommend because have not tried it yet myself. If use, it may require adjustment to the entire recipe to get same result as glucose. A trial will not hurt though and can give me feedback if it works.

Usually solidify in few minutes so be fast it it and leave to dry for just about an hour or touch to feel if it's cool totally not hot or warm in temperature

Yeah you can place it on Cake. It does not just melt off easily

If using thermometer, check for about 300 degree Celsius but I didn't use thermometer. Just put small portion in cold water and if it becomes solid instantly, then it's ready

You don't freeze it it just sets hard. Then lift it off the mat

Yeah, no need to freeze it to become hard. It hardens by itself as it cools on the Silicone mat. That's why you should be swift to pour it on the Silicone mat before it even solidifies in the pan.

The best option is the glucose. Though you can try the corn syrup to see if you get desired result. Yeah, you can use parchment paper. Watch our previous video on how we did it on paper to help
