This is exactly what my parents have always done with the extra egg and bread crumbs from making chicken cutlets....we had a huge plate of cutlets and my father would make “bread” with the remanding batter. It was a beautiful meatless fried flat bread 🥖🙂 LOVE Lisa’s videos

I've made a similar recipe with Spinach for many years. Just take frozen spinach and drain the moisture by twisting the spinach in a dish towel to remove excess water. The Spinach adds vitamins and texture and helps keep the balls together. Yum!

My Mom was born and raised in Italy she now lives in America but she told me when she was small they couldn't afford meat so,they always made meatless meatballs and we use a mixture like this to stuff squid with for Christmas Eve with pasta and a red sauce ....recipe is a lil different but it's so cool to see someone else also makes these..thank you for sharing

My mother makes eggplant balls with a little bit of white rice to help make it stick...now those are delicious egg balls!!! Lisa’s eggballs look good but compared to eggplant in tomato sauce I can guarantee eggplant balls taste much better.

My Sicilian family had made egg balls for my entire life, they’re easily everyone’s favorite. But my Italian great grandma was not big on “recipes” per se (Nona: “add some parmesan, as much as you need... add the eggs,” Us: “how many eggs Nona?” Nona: “As many as it takes you mamaluke!”) so that made it difficult to get the egg balls “just right.” I’ve spent years trying to get them as good as my grandma and great grandma’s egg balls and I’ve gotten pretty good but my problem was mine were never as light and fluffy as theirs and I couldn’t get it no matter what. Last night I made them using your method Lisa (not frying them before you put them in the sauce and doing the eggs first only adding breadcrumbs a little at a time so you can control the texture much easier) and I can’t even tell you how awesome they turned out! My husband (who has tried and loved many iterations of my egg balls over the years) literally stopped after his first bite and said “oh my god” out loud. He said they are easily the best egg balls he’s ever had. So thank you so much for helping us to perfect our family favorite!

Well, I've made this recipe twice. The first time I halved it, the dough didn't really firm up after 15 minutes in the frig, and they didn't rise when I covered the pot and cooked them for 10 minutes. Disappointing, however, I DID mess with the recipe by halving it. So, today, I made them again, exactly according to the recipe. Used a little more sauce (jarred) this time too. I allowed the dough to chill for 20 minutes in the frig this time, however, it was still too wet, wouldn't really roll into a ball, and stayed pretty flat after 10 minutes on one side, and another 10 on the other. So I'm thinking, maybe it's the sauce I'm using. It didn't really 'simmer'.. it kind of blub, blub, blubbed--like sauce does... I still had a TON of dough, so I tried boiling water and cooking them in that..sort of like matzo balls. They were very wet, very loose and didn't really hold together very well. I tossed those in the garbage. I still had quite a bit of dough left. For my final attempt, I greased a mini muffin pan and baked them for 15 minutes. I'm sure they lost a great deal in the translation, but at least they cooked into a usable item. They were almost baked omelet -like ..sort of. The flavor was really good though. I did a second batch in the mini muffin tin, baking for 10 minutes this time--much better! Not at all sorry I tried the recipe. I doubt I'll ever try to make them in sauce again. Since the dough was the same both times I made it, I'll probably only make half the recipe if I ever do it again and just bake all of it in the mini muffing tins, freezing the surplus balls after they've cooled. Half the recipe makes a LOT. The full recipe makes a TON. :)

Have you ever heard of a poor man’s cutlet? It is the mixture that is left after you have made your Chicken cutlets, the egg and the bread crumb that is left, you combine it together and fry it in the same pan as the chicken cutlet, it’s delicious, you spoon it in the pan of to make the shape of a cutlet

There is lactose free cheese but usually these hard agef cheeses have like minimal traces of lactose in them. FYI: Vegans don't eat eggs.
