Thank you for posting this. I’ve always been looking for a good wet veggie burrito. It reminds me of a restaurant I used to go to in college in Boulder called the Harvest. It was a very Hippie restaurant with great vegetarian options.

The fact that it needs the best "veggie" disclaimer would be clear indication to me, that this dish doesn't want to be vegetarian. There are dishes that are better vegan / vegetarian ...

This is the best breakfast burrito I’ve ever made. The sauce is absolutely killer. I added potatoes instead of peas because…don’t panic pantry! 🤍
